Eggplant Pizza

Miami Beach adventures and NYC visitors knocked me straight out of any routine.  Grocery shopping hasn’t been a real thing in quite some time. Instagram activity is slow and FoodFash activity is even slower.  And when I ever so subtly mentioned to my mother than I’ve been living off of frozen dumplings.  That gasp…  It was time to shop the perimeter.

Sliced Eggplant

Eggplant, tomatoes, and basil sandwiched with a couple of cheeses and sprinkled with salt, garlic powder, and pepper.  I used this post as my eggplant cooking guide and made the rest up on the fly.

Sliced Tomatoes

The only thing I wish I would have done differently is double the amount of tomatoes stacked on each piece of eggplant.  Next time, eggplant pizza, next time!

Favorite Snack

Coconut Oil Popcorn

Can you imagine the look on my friend’s mom’s face when she served us popcorn and I asked if she had nutritional yeast {in 1987}?  True story. Popcorn with nutritional yeast has been my favorite snack for as long as I can remember.  But two things have changed.

Popcorn Maker

1. I have a popcorn maker that pops without spewing kernels all over the kitchen.  Or even worse, down your shirt.  Kernel burns are a real thing when you’re working with a dysfunctional popper.

Coconut Oil

2.  I’ve traded in butter for coconut oil.

I melt, drizzle, and sprinkle with salt and yeast.  And then I curl up on the couch with my cozy snack and call it a day.

Hummus Deviled Eggs

After reading one of the many things you’re doing wrong lists out there, I had to try peeling boiled eggs the right way.  I started with Martha Stewart’s instructions on how to make perfect hard-boiled eggs. And then finished by placing the boiled eggs in a large bowl filled with ice water and one teaspoon of baking soda.

Let me just tell ya, this was the least stressful egg peeling that’s ever gone on in my kitchen.  From this point forward, I’m a baking soda believer.

And then I went on to experiment with the ever so classic deviled egg.  Truth be told, I had some 365 light mayo in my fridge that tasted like poison and I needed an alternative.  Hummus seemed like the logical route.  This recipe needs some tweaking, but I’ll give you the ingredients and measurement starting points to get going.

A grilled cheese is the perfect platform for all sorts of goodness.  Hearty wheat bread, extra sharp cheddar, caramelized veggies – this wasn’t the kindergarten kind.

Grilled Cheese Prep

I purchased a mini whole wheat boule at the grocery store on my way home from work.  It was cute and screamed portion control.  Truth be told, I would have finished whatever sized sandwich that was placed in front of me.  So tonight, the mini-er the better.
