It Really Is Perfect

I stumbled upon this salad recipe a couple weeks ago and couldn’t wait to try it.  And considering that I use Jenna’s pizza dough recipe on the regular, I trusted that this recipe would also taste every bit as good as it looked.

I remember tasting tahini the first time I made hummus and thinking… Ew.  But each batch of homemade hummus was accompanied by another tahini tasting, followed by an increased liking of the used-to-be-strange-to-me taste.  Now I find myself sticking my spoon in the tahini jar a little more frequently than the peanut butter jar.  Weird?  Possibly.

And mixing tahini love with sriracha obsession?  Bomb.com

This salad was simple enough to throw together during a weekday lunch, but complex enough to leave you wanting for nothing.  I had never (knowingly) tasted white balsamic before and was so pleased with how well the vinegar flavored without overpowering the other awesomeness this plate had to offer.  I’ll be making this salad again and again and again.  That’s a promise!

Post-Weekend Recovery

After a weekend full of splurging in every arena possible, I was in dire need of Runyon and some healthy eats.

Nathan and I hiked the canyon in the foggiest (smoggiest?) weather ever and then headed to M Cafe for the healthy eats.

I started with a juice made of lemon, wheat grass, ginger, and another ingredient that escapes my mind.  I really enjoyed the tartness of the lemon and the ridiculous amounts of nutrients I knew I was getting with the wheat grass.

Then I moved on to the wild salmon and asparagus sandwich on multi-grain toast with a side of kale with spicy peanut dressing.  I loved how thin the toast was and how they added asparagus to a sammy.  It was a perfect, post-hike meal.

And look at that!  My sandwich and I even smiled at each other before I took my first bite.

Fish In The Kitch

Lately, especially while out to brunch, I’ve had major lox bagel cravings.  But since I’ve focused A LOT on breakfast lately (and I’m not quite ready to test out Tofutti and salmon) I decided to make a lox inspired sammy.

Why is canned salmon so much scarier than canned tuna?  I spent an excessive amount of time at the grocery store sorting out the confusion that was canned seafood.  You can buy this stuff with bones!?  Sick.

FoodFash Salmon Salad Sandwich (yields 2 servings)

1 can of salmon (boneless/skinless)

1/2 shallot, chopped

1 tablespoon of capers

1 – 2 tablespoons Vegenaise (reduced fat)

2 slices of sprouted wheat bread

baby spinach leaves

I love toast.

Seriously, everything about toast stuffed with  <insert protein> salad and greens is so classic and good.
