Loaded Nachos with Avocado Cream

Ever since Greek yogurt made an appearance on grocery store shelves, I’ve been a fan. Seriously, who can turn down thick, creamy, low-sugar yogurt? And it wasn’t much long after discovering Greek yogurt that I began using it as a substitution everywhere and anywhere. FAGE Total Greek yogurt was and is my go-to brand. The texture and flavor of FAGE is top notch and, beyond that, you can’t beat the simple, non-GMO ingredient list.

One of the easiest substitutions to make is replacing traditional sour cream withFAGE Total Greek yogurt. I’ve always used FAGE Total 2%, but love that FAGE Total comes in 5% {I’m all about good fat!}. It’s such a simple switch and, I find that, Greek yogurt has many more uses than sour cream so it’s always in my fridge. Nachos tonight, breakfast parfait tomorrow morning!

After years of sour cream swapping, I decided to get even more creative with Greek yogurt for savory dishes. Remember how I love good fat? Well I decided to add even more good fat to FAGE Total 2% by mixing it with avocados to create avocado cream {recipe below}. Avocado cream can be enjoyed solo as a chip or veggie dip or used to make nachos and quesadillas extra special.

My husband and daughter are now the biggest avocado cream fans. And my husband was super impressed with a dip/topping having so much protein and probiotics from the live active yogurt cultures. By the end of our loaded nacho dinner, he was already thinking of what we could make to incorporate avocado cream again.

I also enjoy getting our entire family’s input on ingredients for loaded nachos because they come out so much more impressive than when I make them on my own. My husband loves black olives and green onions and my step-daughter loves tomatoes – I’m typically a nacho purist and would have totally skipped over these ingredients!

Our loaded nachos ended up including: tortilla chips, Monterey jack cheese, cheddar cheese, black beans, black olives, tomatoes, green onions, pickled jalapeños, cilantro, and avocado cream. My biggest nacho tip is to take the extra time to create one layer of chips, add layers of all of your toppings, and repeat until you reach your desired quantity/height. I layered all of the ingredients except for the cilantro and avocado cream and put the nachos in a 400 degree oven for approximately five minutes, until the cheese was melted and the chips were warm.

Chop Chop

You know how most of the time you finish eating a salad, not because you’re full, but because you’re over it?  Then two hours later when you’re prematurely starving again, you’re like “man I wish I would have finished that salad”?  Number one reason why salad choppers are magical.  They allow you to turn a boat load of greens into a normal sized portion that’s super filling and far from boring.

They also allow for a perfectly even distribution of ingredients and dressing.  A Type A personality’s salad dream!

I’ll be making a lot of chopped concoctions over the next few weeks, so I hope you’re as eager about de-fluffing for summer as I am.

A FoodFash Chop

Handful of greens (I used baby romaine)

2.5 ounces of solid white albacore tuna in water

1/2 avocado, roughly chopped

1/2 green apple, roughly chopped

1/3 cucumber, roughly chopped

1 tablespoon Vegenaise

1 tablespoon white balsamic vinegar

Chop, chop, chop and enjoy!

Toasted Cheese, Avocado & Sriracha Sandwich

This sandwich was a total accident.  I had planned on making a piece of cheese toast before heading to an appointment today and was unexpectedly inspired by the lone avocado in my fridge.  It was begging to be included.

Ok avocado, you win.  I’ll slice you into three fat chunks and smother you with melty cheese.  It’ll be a good day for both of us.

I toasted a piece of pumpernickel rye topped with two slices of organic cheddar until the cheese was transparent and bubbly.

I cut the cheesy bread in half and arranged the avocado on one side, swirling a generous amount of sriracha over the top.

I closed up the sandwich and took my first bite.  Wow.  This combo was so delish that I must have lost the ability to hold the sandwich together.  I took my second bite and sriracha coated avocados went flying everywhere.  I reassembled the sandwich, pulled myself together, and focused on carefully eating the remaining bites.

Christmas Party Recovery

Last night was the first company Christmas party I had attended since 2008. The construction industry was full of doom and gloom and I just didn’t have it in me to get all dolled up just to chat about recent and upcoming layoffs.  Kinda killed the Christmas spirit, ya know?

This year was different.  The doom was replaced by hope and chatter of layoffs was replaced by chatter of new babies.  The setup was tasteful, the food was tasty and the cocktails…  Well, the cocktails went down a little too easy.

We even kept the celebration going by heading to Fly Bar afterward!

But continuing the party made for a super sluggish Saturday morning.  Green tea, Earth Balance noodles, and nap.  No bueno.

I woke up from the nap feeling like a new person and craving my favorite breakfast: egg and avocado on a sprouted wheat english muffin.  I changed it up by sprinkling with crushed red pepper.  Yum!

Now off to meet Lex, who just moved back from Texas!!
