Adventure Begins in the Kitchen

Thai Temple

Between wedding season, races, and Healthy Living Summit planning, Meghann has been a busy little chickadee.  We hadn’t hung out since Rasa-Lila in April and a meet-up was long overdue.

A Thai Temple Sunday for a couple of foodies = an almost perfect plan!

We headed to the flower/veggie tents right away.  I think she and I were both on the same ‘flowers are fun to take pictures of’ page.  I also think we both wished we had greener thumbs and were capable of sustaining such pretty plants.

When we approached the food tents, I was sooooo hungry.   I wanted to order coconut custard right away, but Meghann suggested we walk around and look at everything before diving in.  That idea may seem like common sense to you, but to me, it was genius!

I’m often guilty of food buying remorse in situations like today, but walking around most definitely prevented me from spending entirely too much money on stuff that didn’t taste nearly as cool as it looked.

It only happened once.  I’ll give you a hint, it’s green.

We spread out our Thai smorgasbord and dug in.  And… within ten minutes , we were defeated by full bellies and June heat.

We chatted about how nice it would be to come back with a large group (i.e. larger smorgasbord) when it cools down – cool enough weather that it wouldn’t be torture ordering soup!  But we later established that if we are craving Thai Temple any time soon, that bathing suits are a must so we can dive in the pool the second we get home.

Breakfast: Fried Egg & Sourdough Rounds with Sriracha Tofutti

Lunch: Fried Tofu with Spicy Kale and a Hard Boiled Egg

Dinner: A Bigger Hummus Wrap for the Road

I’m attending a conference tomorrow in Orlando, so one of my best friends, Jimmy, suggested I come hang out with them for the night.  I’m verrryyyy excited because this will be the first time I’ve seen them since their wedding and I can’t wait to hear about their honeymooning in Italy!  I packed a gynorm wrap for the drive (I still have loads of veggies leftover from last night).

So on a scale of one to ten, ten being a ton…   How much of this wrap do you think will end up on my lap by the time I arrive in Orlando?

A Spicy Exploration

And so it is… my Sriracha exploration continues.  Tonight’s concoction?  Sriracha hummus.

I made two batches just in case the spicetastic version was a complete fail.

A failure wasn’t in the cards tonight, cause Sriracha hummus is the jam.

I used almost the entire container of the orange-colored hummus on my sandwich and then added shredded carrots, baby cukes (sliced lengthwise), and sprouts.

A super fresh wrap with a  hint of spice = the perfect post-Bayshore dinner!

Look what I found today!!!  I was so pumped when I saw The Sriracha Cookbook on sale at Urban Outfitters.  So pumped.

I pressed some extra firm tofu for the occasion and marinated it in Intensity Academy’s Green Tea Gourmet sauce.  I’ve used this marinade with tofu before and I think the flavor absorbs pretty quickly without overpowering other parts of the meal.

In the meantime, I sauteed garlic, onions, and green peppers in a little bit of Earth Balance until they were sufficiently browned.

Then I turned to my new book for sauce inspiration and mixed 1/4 cup of Tofutti with 1 teaspoon of Sriracha.  Holy heck!  Every sandwich should be topped with this combo!

I slathered both sides of a sourdough bun with the Sriracha/Tofutti mix and then layered with veggies and fried tofu.

The only thing I would have changed was using a softer bread.  It was a impossible to eat without squeezing all of the good stuff out of the sandwich.

But that obviously didn’t stop me from finishing every last bite…
