Bucatini With Mushrooms & Asparagus

Runny Egg Pasta

I contemplated a few dishes during my traffic-filled journey to the market this afternoon.  No Recipes’ Parsley Pasta was on my mind.  Eating Well’s Asparagus-Mushroom Mini Lasagnas was printed and tucked in my purse.  And as I walked through the store, somewhere between the produce department and the noodle aisle, I decided to make a hybrid of the two.

I picked up a brown paper bag filled with semolina bucatini {the thickest noodle I had ever seen}, veggies, and parmesan.  And then I rushed through the checkout line, excited to put all of these ingredients together, and even more excited to put an egg on it.

I haven’t yet mastered how to fully cook the whites of an egg and still keep the yolk extra sunny.  But egg aesthetics aside, I thought it turned out beautifully.  A veggie-filled, protein-topped, totally tasty dinner.

A Good Morning Habit

Breakfast Green Smoothie

For the past four-ish months or so, I’ve been a weekday smoothie breakfast drinker.  I’ve got the quickness down to a science, so I never have an excuse not to devote the six required minutes it takes to start my day off right.

Chia Seeds in Smoothie

It starts with a freezer stocked with various frozen fruits and veggies.  I usually have an assortment of spinach, kale, strawberries, cherries, blueberries, mangos, and pineapple.  And then some chia seeds (or flax or hemp seeds).

Blendtec Smoothie

I fill a Blendtec with 10 ounces of warm water (yep warm!), 1/2 cup of frozen greens, 1-1/2 cups of frozen fruit, 1 tablespoon of chia seeds, and let the blender do its thing.  The warm water keeps the juice from turning into sorbet.  Some of my fav combos are spinach-strawberries-mangos-chia and kale-blackberries-cherries-pineapple-chia.

Cooking Planit T-fal Giveaway: Cookware Review

Salmon Cakes

It’s less than a week until the Cooking Planit T-Fal Giveaway on FoodFash begins!  To stir up excitement, I decided to bring back my most popular recipe to date (salmon cakes) and see what these T-Fal frying and saute pans were all about.

At first glance, these pans felt much sturdier than your typical non-stick variety.  The stainless steel added an extra weight that assured me that heat would be distributed more evenly, even on my slightly crooked range.  And that red circle in the middle of the pan?  A heat indicator that shows you when the pan is perfectly pre-heated and ready to sear your… salmon cakes.  An unexpected surprise that surely wouldn’t have been a surprise had I read some fine print along the way!

I plopped the salmon patties on the hot surface and waited for it to do its thing.  And while the salmon cakes were a cookin’, I heated up some coconut oil in the saute pan and added green beans, almond slices, and garlic salt.  Veggies and nuts, simple and good.  Always.

And when it was time to flip the cakes, I reached for the metal spatula that came with the T-fal set.  Metal?  I’m fairly certain I’ve been scolded well over a handful of times for using metal on a non-stick surface.  I proceed with caution, ate the salmon and veggie dinner, hand-washed the pans, and then sat in front of the computer to write this post.  And then, just a moment too late, read that T-fal pans are dishwasher safe and scratch resistant (meaning they are safe to use with metal utensils).  Good to know!

Also good to know that this set is oven-safe up to 350 degrees.  Weekend frittatas are totally up next!
