Baby Breakfast: Green Pancakes

Nothing could have prepared me for how much work feeding an infant would be. Perhaps I made life more difficult by going the Baby Led Weaning route, but at the time {6 months} it felt like the right approach. Five months later {at 11 months} I couldn’t be happier that we toughed out the messes and the meal prep. Fixing Ezra’s meals for the week is still a ton of work, but I’ve come up with a few “go to” recipes that make it easier. And seeing how independent of an eater he is just lights me up. His fine motor skill development and appetite for textures and flavors are pretty incredible.

I created this Green Pancake recipe as a solution for weekday breakfasts. I wanted a meal that was packed with nutrients, sized/textured for self-feeding, and easy to make in bulk then freeze. I’ve been modifying this pancake recipe in some form over the past decade – it’s wonderful!

I use a cookie scoop to make baby-sized green pancakes. I keep a few in the fridge for the current week and store the rest in the freezer for future breakfasts. I’m guilty of snacking on a few green pancakes here and there too!

Bacon, Egg & Cheese Crescent Rolls

The holidays are quickly approaching, which means get-togethers and baking galore. And while our social media feeds will be filled mostly with sweet treats and holiday meals, I’ll continue dreaming up savory breakfasts {my favorite!}.

Pillsbury crescent rolls are a convenient {and delicious} way to wrap up your favorite breakfast ingredients. What you’d ordinarily stuff in a breakfast taco or kolache will work wonderfully wrapped in this buttery dough.

When I asked the Instagram world “what are your favorite ingredients to stuff inside a Pillsbury crescent roll?”, I was amazed at many creative responses I received! Jalapeño cream cheese, pepperoni pizza, spinach artichoke dip, cinnamon apples, Nutella, sausage. Every single suggestion sounded oh so delicious!

But the combination that won me over this go around was egg, bacon, green onions, and sharp cheddar. Let me just tell you, this is a glorious way to start a morning! Green onion gives the crescent roll a nice complexity and thick slab bacon adds a crave-able savory smoke. When prepared and heated up the next day, these breakfast crescent rolls are still top notch.

Chocolate Coffee Cherry Shake

If you’ve been following along on Instagram, it’s impossible not to notice how many “#media” burgers I’ve eaten recently. I’m fairly certain I’ve consumed more burgers this month than ever in my 33 years. And while I love eating {and photographing} a beautiful burger, my body just isn’t equipped to handle heavy food. Much like a child who’s eaten too much candy, I get sick and tired and grumpy {like really grumpy}.

But I’ve been having so much fun bouncing around town with my favorite bloggers/Instagrammers that turning down events doesn’t feel like a good option {right now}. To combat the negative, I’ve tried to keep non-media meals nutritious and light and not feel obligated to eat everything on my media-meal plate {only eating one bun or splitting with a friend}.

This chocolate, coffee, and cherry shake is my go-to when I’m on a tight morning schedule because it allows me to combine caffeine, protein, vitamins, and a serving of fruit. If things don’t go as planned throughout the day or I have an event, I feel better having had at least one balanced meal.

French Omelette with Asparagus and Goat Cheese

Ages ago, a friend of mine was talking about his upcoming week in culinary school and how they were taking on the French omelette.  French omelette?  Aren’t omelette’s all the same?  He explained the difference and I’ve been wanting to tackle the French omelette ever since.

I spent a few minutes watching Jacques Pepin and Julia Child videos {seriously}.  I preferred Pepin’s style and, with his instruction, was able to execute a mighty fine first attempt at a French-ish omelette.  I say French-ish because I used asparagus and goat cheese in lieu of traditional herbs.

A regular {non-French} omelette, in my opinion, tends to be dense, requiring a ton of filling in order to make the egg less overwhelming. With the French omelette, that’s not the case.  This version is so light and fluffy, you barely need any additions.  Simply put, I adored this omelette and can’t wait until the weekend rolls around so I can make it again!
