Homemade Coconut Cake Donut

Donuts are a food that I rarely thought about before Instagram and #nationaldonutday. I have always been one take down a few glazed Krispy Kremes if presented with a box, but I’d never go out of my way to find a donut. But lately, and this is slightly embarrassing to admit, I’ve been on a quest for pretty food, Instagrammable {but also delicious} food, which led me straight to a donut pan purchase.

And for my first donut recipe? I turned to my blogging pal Liren, of Kitchen Confidante, because trying one of her recipes has been on my list for entirely too long.

Homemade Coconut Cake Donuts

Liren mentions in her post that if you love coconut cake, this is the donut for you {and I couldn’t agree with her more}! I love how she added fresh lime juice to the glaze for a subtle burst of tartness that complimented the sweetness of the coconut so well.  I can’t wait to experiment with flavors of my own as donuts will be the perfect treat to bring to get togethers all summer long!

Popovers may be one of those things that you’re better off thinking are difficult to make. Life changes a bit when you realize fluffy, eggy popovers are a quick whip and a mere 40 minutes away.  You may find yourself purchasing specialty bakeware, researching methods on how to get “poppier” popovers, and testing said methods night after night.

I’ve been making half of the popover recipe on the back of the King Arthur gluten-free all purpose flour box, substituting traditional milk with goat’s milk {for a slight gaminess}, all week long.  Learning a new trick each time, like… not to open the oven {ever!} and using a stand-mixer vs. a whisk.

I also noticed that the proportions and directions differ between the box and the website, giving me yet another reason to continue FoodFash Test Kitchen: Popover Edition.

White Sweet Potato Curly Fries

Homemade Ketchup & Fries

If you’re going to make homemade ketchup, then you must also make a homemade something to dip in said ketchup.  Like curly fries.  White sweet potato curly fries.

I was drawn to the palest sweet potatoes in the stack {labeled Japanese sweet potatoes}, assuming they’d be less sweet than the typical orange variety.  A little Google research validated the less-sweet hunch, but left me confused on what variety of sweet potato I picked up from the stack.  Although Japanese sweet potatoes have a white flesh, their skin is super purple.  A Japanese sweet potato, my potato was not.

Homemade Crispy Fries

Another mission was to make a crispier fry than I had made in the past.  I used this recipe {that called for eggs whites in lieu of corn starch} and a crispier fry is exactly what I got.  And although the spiralized slightly sweet potato fry was delish, it was a bit too time consuming for me.  I’ll likely stick to the traditionally shaped fry in the future.

Homemade Chipotle Ketchup

Homemade Chipotle Ketchup

There is no shortage of housemade ketchup in Austin.  So much so, that I’ve not only developed a taste for the condiment, but the desire to make my own has crept upon me as well.

And since I still had leftover chipotle peppers in the freezer {from salsa making} and I still can’t get enough of that smoky spice, I decided chipotle ketchup was the way to go.

I was surprised how much the ketchup lightened after a few seconds in the Blendtec.  But after the initial confusion of red turned orange, I fell in love with my housemade ketchup.  I jarred some up for a friend’s party this weekend and added ketchup to my unpublished list of store-bought things I plan to home-make from now on.
