Adventure Begins in the Kitchen

Eggs Betterdict

January 23, 2011 by foodfash

If I had my choice of any breakfast dish this world has to offer, this would be it.  My faux eggs benedict may even be in the running for what I’d choose as my last meal.  After discovering my love for avocados, Canadian bacon didn’t stand a chance.

That discovery came in super handy upon nixing meat from my diet.

The restaurant version will deduct, on average, approximately 800 calories from your food bank.  You can probably boost that number exponentially if the hollandaise increases in the slightest.  But my version, well, my version is every bit as good and only has 415 calories (21.5 grams of protein and 10.5 grams of fiber).

And you get to knock out a serving of veggies before noon.

Toast the sprouted wheat muffin and top with sliced avocados.  Fry two eggs, over easy, and let cool slightly.  Poke the yolky area with a fork and let it ooze over your avocado topped muffins.  Place the remaining egg on top of your creation and enjoy!

Clarification:  If you’re confused as to why I’m eating eggs, I’m not following a vegan diet – just no-meat (animal flesh), no-dairy (made from milk).

The Fungus Among Us

January 12, 2011 by foodfash

Remember a few posts ago when I said Vegan with a Vengeance’s pesto was the jam?  Well it is – and even more so than I thought.  The recipe calls for nutritional yeast which, turns out, has the instant ability to kill a cheese craving (i.e. has made the past eleven non-dairy days completely tolerable).

Needless to say, I’ve gone through an ungodly amount of yeast over the past few days.  And it was the first thing on my mind when I thought of how delightful a stuffed shroom dinner would be.

SO super easy. Just make the Vegan with a Vengeance Pesto, stuff the baby bella caps, and cook at 350 degrees for 20 minutes.  I filled the bottom of the dish with a tiny bit of water just in case, but I’m not certain it was necessary.

The best part (other than being extremely tasty) is that nutritional yeast contains 18 amino acids (forming a complete protein), 15 minerals, and is rich in B-complex vitamins.  It’s probably the perfect food for me to be addicted to these days!

Yucky With A Gna

December 31, 2010 by foodfash

There were so many ways I could have gone wrong tonight.  And, for the first 3/4 of the way through eating, I thought I did.  I intentionally butchered the Vegan with a Vengeance Gnocci recipe, completely on purpose, completely disregarding consequence.
