The Photogenic Vegan BLT (VLT)

“Work it…  Work it!”.  Words that almost came out of my mouth as I was shooting this sandwich.  This new found sort of like of tomatoes really works out well in the photo department.  Red on a sandwich is totally beautiful.

Vegan was the mission tonight.  It’s hard to believe that this used to be the mission almost every night (I’ve been off and on veg for as long as I can remember).  But tonight, vegan and Nasoya’s new Nayonaise, were the mission.  Oh and forcing down some tomatoes – that was part of the mission too!

This VLT consisted of Whole Foods Seeduction bread slathered with Nayonaise and topped with toasted Smart Bacon, romaine lettuce, and sliced beefsteak tomatoes.  I’ll be honest, the meat-eater me would have been soooo much happier with legit bacon.  But bacon/faux bacon aside, this sandwich was all sorts of hearty goodness tied together perfectly with Nayonaise.  I’m looking forward to putting this stuff to work in some Easter potato salad this weekend!

Dinner With @Chobani

What a week!  SXSW13 was unexpectedly grand.  Five days off of real work.  Five days off of fake work.  Five days of resting my mind and cruising through the city, plan-less, with my best buds.  I can’t wait to catch you all up!

One of my first SX happenings was going to dinner with Chobani and a bunch of local bloggers at Parkside.  Megan and I navigated our Car2Go through ridiculous traffic, scored a super close, super teensy parking spot between two motorcycles, and got to reading about our Greek yogurt inspired dinner.

Avocado soup, beet salad, grilled prawns, braised beef short ribs, and yogurt custard desert – I should have paced myself.  But pacing was just not possible when each dish that arrived was completely divine.

Everything was so super delish, but I especially loved the avocado soup, prawns, and the basil ice cream that came along side the custard.  The soup was cool, crisp, with slight, salty bursts from the caviar.  The prawns were gynorm and wonderfully seasoned.  And the dessert…  Why wasn’t the dessert served first?  I tried so, so hard to finish, but just couldn’t.  Basil ice cream is happening in my kitchen.  Soon.

In addition to culinary goodness, the company was fantastic as well.  The folks at Chobani were so enthusiastic about being in Austin, meeting with Austin bloggers, and representing their company – I can’t say I’ve met with a brand that exuded more positive energy.  And!  Megan and I sat across from Miss Melody Fury, a super cool character that I hope to run into again in the real world and virtual world, alike.

Sauerkraut & Potatoes

“Hello, my little girl.”.  “Hello, my little gramma.”.  We giggle.  I don’t call my gramma as much as I should, but when I do, that is almost always how the conversation begins.

We talk a lot about food because, well, she’s who shared her kitchen most with me when I was a wee one.  We talk even more about food because she’s FoodFash’s biggest fan (and I appreciate that).  Today was all about sauerkraut and potatoes because it’s a cozy meal that reminds me of my family.  And even when you’re having the time of your life, you always miss your family.

FoodFash Gramma’s Sauerkraut & Potatoes

2 lbs of country ribs (I couldn’t find these in Austin, so used baby back ribs)

5 medium sized yukon gold potatoes, cubed

1 – 28 ounce jar of sauerkraut

salt & pepper

Salt and pepper each side of the ribs and place in a large pot.  Fill the pot with water until the meat is covered by about 2 inches.  Bring to a boil, reduce heat to low, and continue boiling for about two hours (meat should pull easily off the bone).  Remove ribs from water and set aside.  Add cubed potatoes to water and boil for 15 minutes or until potatoes are soft, but not mushy.  When the potatoes are finished, add the entire contents of the sauerkraut jar to the pot.  Stir potatoes and sauerkraut together and let stand over medium-low heat until kraut is warm.  Add the meat, salt and pepper to taste, and serve.

When I asked for this recipe, I wasn’t expecting a list of only three ingredients that required little work and even less dishes.  So I sat there and watched the pot, wondering if my kitchen could produce sauerkraut and potatoes that would satisfy the bit of nostalgia that I was feeling this afternoon.  I served myself a bowl and let the tart warmth fill belly.  I thought about how I forgot to buy cornbread and that I should order some tomorrow.  I thought about how grumpy I’ve been at work lately and that I should change that.  I thought about how I should call my gramma more.

On Top Of Spaghetti {Squash}

It turns out there are benefits to digging through your archives and re-blogging an old recipe.  Like the feeling of goodness that fills you up because you already know you’ll love your meal, and it’s yours.  Or getting a little chance to complete against yourself in the photo department, and win.  In my not so humble opinion, these pictures are worlds better than the old pictures.  Worlds.

I like making meatballs because your hands get messy and there’s something therapeutic about squishing meat through your hands like GAK.

And I like this meatball recipe because there’s no junk, just lean meat and veggies.
