Breakfast: Almond Milk Irish Oats with Bananas and PB2

Lunch: Cornbread and Portobello Chili

Dinner: Matzo Ball Soup with Broccoli Slaw

After spoonfuls of chili and handfuls of cornbread throughout the day, I was barely hungry for dinner.  When I finished with work, I packed up the remaining chili in single serving mason jars, stuck it all in the freezer, and forced my full belly to think of something else to make.  Matzo ball soup!

Big-Ticket Brownies

Are you sick of hearing about Terry Walters yet?  Hope not, cause she has yet to provide me with an unsatisfactory recipe.  And the cocoa brownies I made tonight were no exception.

The amount of fruit packed into these bad boys is ridic!

Applesauce (or shredded apples), Dates & Bananas.

No refined sugar, no glutenous flour.

Minus the washing of the food processor (that’s still sitting in my sink), the recipe was super simple.

And you can help yourself to all the batter your little heart desires without fear of salmonella since this recipe is prepared sans eggs.

The downside?  And it’s a major one.  The ingredients for these brown beauties set me back a whopping thirty bucks, making them the most expensive brownies in the history of all brownies.

Dinner: Miso Soup and Sweet Potato with Earth Balance & Dash of Salt

To distract you from the fact that I ate three pitas within a four-ish hour period today, let’s talk about the Flip!  A few weeks ago, I submitted a recipe/video proposal to Foodbuzz for a chance to win a Flip and some Newman’s Own goodies.  And whattayaknow, I won!

The only prize I ever recall winning was a gift certificate to a golf pro shop that was at or around 0% interesting to me.  So when I opened the giant, mystery box that arrived today and saw that my proposal earned me some swag, I was STOKED!  The kind of stoked that made me want to call everyone I know, immediately update my Facebook status, and pace needlessly around my 800 SF condo.

It seems I have two choices…  Either continue to re-check The Conscious Cook out from the library every couple weeks for the rest of my life orrrr purchase a copy for myself.  The latter sounds a lot less complicated.

I’m not the biggest fan of meat substitute products, at all, but when my friend Ginnean mentioned that her husband would let her make Gardein for dinner, I figured it had to taste pretty normal.

And then I saw The Conscious Cook’s Gardein “Chicken” Scalloppini recipe when I was flipping through the pages this morning and couldn’t wait to test it out.  I decided to leave out the Udon Noodle Cakes and Pea Shoots in order to make it less gourmet and more every day.

LOVE.  MUSHROOMS.

This recipe was the perfect combination of easy and still feeling like you’re being chef-like.  My current foodie hero, Terry Walters, better watch out cause Tal Ronnen is oh so close to being my Number One – the Gardein “Chicken” Scalloppini was RIDIC!

I honestly planned on roasting brussels sprouts as a side tonight, but the crusty goodness in the background was dominating the oven.  The result of my second ever Kitchen Aid use and my first ever bread making trial was a smashing success too.  Check back tomorrow for crusty goodness deets!
