Beet Carrot Lemon Ginger Juice

I’m totally beginning this Austin City Limits adventure keeping the end in mind. Not in a negative way, but in a positive preparation sort of way.  In a start your day with the good stuff before consuming junk all day kind of way.  And my new Breville juicer arrived just in time.

And since I’ve been picking up Juiceland’s Moderator juice whenever possible, I figured my first good stuff would contain beets, lemon, and ginger.  I only swapped apples for carrots because my memory failed me.  But it ended up being a wonderful mistake.

Juicing

I juiced everything separately so I could mix to taste.  This was my first solo juicing adventure, after all.

Beet Carrot Lemon Ginger Juice (yields (4) 8 ounce servings)

2 large beets, washed and trimmed

1 pound carrots, washed and trimmed

1 – 4-inch (approximate) hunk of ginger, washed

juice of two lemons

Cut beets, carrots, and ginger into manageable sizes and add to juicer.  Use a handheld citrus juicer for the lemon and add the lemon juice to the vegetable juice. Pour in a fancy carafe, refrigerate until chilled, and drink!

A Super Speedy Lunch

Turkey Avocado Lettuce Wraps

During the final stretch of hundred degree days, I’ve had constant a craving for cold food.  Sandwiches, salads, seafood, juices – they’re all I want.  So when I found this giant (bacon variety) avocado, I swooped it up and went on a hunt for what I could wrap around it.

Nitrate-free turkey breast, dill havarti, and crisp romaine.  Good solution.

And a fast solution.  I was able to run home during lunch today, quickly prep these wraps, and then spend the rest of my hour laying out potential outfits for ACL. Priorities!

Sisters And Copperfish

After a few days with family, I headed to Val’s house for some solid BFF time.  We spent the final weekend hours strolling down Bayshore, shopping, lunching, lounging, and dinner dining.  It was glorious.

Our last weekend meal was at Copperfish, where we met up with her sister, Lindsey. The sisters focused on the wine list while my eyes super-focused on the oyster shooters.  When all things alcoholic were delivered to our table, we were ready to order.  Mussels skillet and calamari times two.

The mussels made quite the entrance in their colorful, steaming skillet.  They were well-sized and cooked to perfection (there’s nothing worse than a shriveled, overcooked mussel!).  And then to the best part, the broth, which was extra light and filled loads of shallots, oyster mushrooms, and tomatoes.  I went for the grilled bread and sopped up every last bit – a sure sign of a broth-well-done.

Another bottle of sauv blanc and TWO desserts, we turned an ordinary dinner into a celebration of sorts.

Overall, this new Tampa establishment was on par with some of my Austin favorites.  The menu was simple/well done, the decor was tasteful and hip, and the service was a perfect balance of friendly and attentive.  I am certainly looking forward to more meals here during future visits home!

The Gameday Breakfast

Game Day Breakfast

As a second generation Florida Gator, I learned the importance of a substantial gameday breakfast early on.  And since I’m a savory breakfast kind of gal, egg sandwiches have always been my gameday go-to.

HEB Spicy Corn Relish

When I opened my September HEB Primo Picks box, visions of spicy egg goodness immediately popped into my head.  I toasted up some sprouted wheat bread, topped with sliced avocados, an over-medium egg, and HEB‘s Spicy Relish that Corn.  I dove in with a fork and knife (which were oh so necessary) and immediately wished I had more avocado so I could treat myself to seconds – it was SO wonderful.

Texas Tea and Vodka

Wonderful and… hot!  I dug through the box to see what I could snack on to calm the burn, when I found the perfect thing: Peach Texas Tea.  And then I thought “if this is a gameday breakfast, then surely this tea should be turned into a cocktail”.  So there ya have it!  As I cheer on the Gators in Austin this season, I’ll be enjoying a Texa-fied start to my gameday with a spicy corn relish egg sammie and a Texas Tea with a splash of Tito’s.
