Waste Not, In Pictures

Breakfast: Cremini Mushroom & “Cheddar” Daiya Omelet

Lunch: Hummus and Avocado on Sprouted Sourdough Toast

Dinner (“Appetizer”): Peas with a teeny bit of Earth Balance and Garlic Salt

Dinner (“Main Course”): Air Popped Pop Corn with Earth Balance and Nutritional Yeast.

Dessert: Tofutti Key Lime Cutie

Either a result of overbuying or changing plans, tossing food (weekly) in my house is inevitable.  It’s a total waste, it’s gotta stop!  Waste of food, waste of time, waste of MONEY.  Like I said, total waste.

Each of the meals above uses a leftover ingredient, an ingredient intended for a recipe that was never created, or an ingredient that’s been living in my freezer for entirely too long.  I like it, it’s a good plan – you have to start somewhere, right?

Another Non-Dairy Day, In Pictures

Breakfast:  Lemon Soy Yogurt, Organic Blueberries & Ground Flaxseed

Snack: Go Raw Spirulina Super Chips

Lunch:  Brown Rice Fusilli, Leftover Marinara Sauce, Spinach & Mushrooms

Dinner:  Tijuana Flats Black Bean Burrito with Lettuce, Salsa, Black Olives & a HUGE Side of Chips (unnecessary!)

All of the above is my answer to the question I hear a lot lately – “what exactly do you eat?”.  Sure my twenty ten self would have opted for Fage Greek yogurt with honey, grated parmesan on my pasta, and every power lite dairy option Tijuana had to offer.  But these small substitutions allowed me to end the day feeling satisfied and, most importantly, good.  And darnit, I like feeling good!

Cheapest. Day. Ever.

Pictured above is one of the many highlights of my sunny Sunday – Cafe Hey’s quinoa salad.  Amazing.  As I read the daily specials I thought ‘this place will be key in my no-meat, no-dairy twenty eleven and it’s going to make me broke’.  Not the case.  The total was a mere $2.12.

The other highlights of my Sunday?

Breakfast was quite wonderful.

A sprouted grain english muffin with tofutti and jam washed down with a tall cup of green ginger tea.  This would be breakfast daily if I didn’t fifteen minute fire drill out of my house every morning just to arrive at work approximately 5 to 10 minutes late every day.  I thought about adding ‘no snooze button’ to my resolution list, but it just won’t happen.

And then the I, not so hesitantly, camera creeped around town.

It was solo exploration at its finest.

A little cookbook hunting for a recipe that justified a trip to the oceanic market, which just happened to be adjacent to Cafe Hey – well planned, right?

$10.02?!  Cheapest.  Day.  Ever.  Now off to FREE yoga in the park!

Oh and today?  I love you.

Peanut Butta Jelly Time

Monday was my first day in the office since the 17th and I felt as though I had reverted to the first week of my working life.  You remember those days, don’t you?  Two-ton eye lids.  Snail speed clocks.  Hate texts.  Lots and lots of hate texts directed towards any of your contacts that had yet to enter the working world.  I was twenty-two year old tired and I intended for dinner to be simple.

I was super anxious to try this new jelly.  And so it was, PB&J.

Did I mention that I don’t have a toaster?

Well, I don’t.  And sometimes this happens.

But never has it happened twice in a row.

So three tries, six slices of bread, and twenty minutes later – I had myself a sandwich.

Jelly = Crofter’s Asia Superfruit (which was pretty amazing)

Bread = Sprouted Sourdough

Peanut Butter = MaraNatha No Stir Organic
