When it comes to meat, I’ll be the first to admit that I’m not all that adventurous with seasonings and cooking methods. This is in part due to perpetually being in some kind of hurry.  But the reality is, it has mostly to do with how salt, pepper, garlic powder, and cayenne just work.

Homemade Fruit On The Bottom Yogurt

Blackberry Fruit On The Bottom Greek Yogurt

Gosh, have I been on a yogurt kick lately!  So much so that I feel a little guilty for the amount of plastic that’s been making its way to the recycle bin.  In an effort to reduce the amount of single serve cups {and refined sugar} I’m consuming, I took it upon myself to test out a homemade version.  And I can’t believe I haven’t been going about yogurt this way all along.

Blackberries and Coconut Sugar

Coconut sugar is much lower on the glycemic index than granulated sugar, making it a completely decent choice for breakfast and dessert alike.  And if blackberries aren’t your thing, you can swap out blackberries for blueberries or strawberries.

Chilaquiles With Sprouted Corn Tortillas

Although I rarely cook Mexican food, this chilaquiles recipe kind of set the stage for my cooking style. It was the first time I snuck shredded zucchini in a dish. And it was one of the first dishes that gave me the confidence to start playing around with modifications.

Sprouted Corn Tortillas

This time around, I modified by adding pulled chicken thigh meat and substituting regular corn tortillas with sprouted corn tortillas.  And let me just tell ya, this was the best chilaquiles yet!

Cheesy Stuffed Zucchini Boats

There’s something about cold weather that makes me crave the coziness of meaty red sauce.  But it’s still January and I’m still in the constant process shedding the holiday fluff, so I got to thinking about a no-noodle alternative.

And since I’m always stuffing zucchini into meat dishes, why not change it up and stuff meat into a zucchini dish? And that’s how this recipe was born.
