Ariel Food!

I have a distinct memory of Maya, Ariel’s mom, letting me help her make matzo ball soup during my high school years.  It was love at first messy handed- impatiently waiting-finally ready-taste.

I’ve had spontaneous, massive matzo cravings since.

It wasn’t until I lived in Dallas and had a craving I couldn’t fix that I attempted to make my own.  It was so easy.  I was so proud.  I posted a picture on Facebook and tagged Ariel right away.  To this day, there’s a pic of my matzo ball soup in her photos.

As I was packing for my LA trip (to visit Ariel, I leave on Friday, so excited!), it dawned on me I hadn’t made matzo since I lived in Dallas.  Ludicrous!

After eating chili for too many meals/snacks in a row, I was ready for some broth.

After the matzo was puffed, I added a half of a bag of broccoli slaw.

You can use the other half of broccoli slaw when you reheat leftovers so you have some crispy veggies along with the mush.  Guaranteed win!

My neighbor, Stewart, stopped by to experience the matzo.  I haven’t had “stop by” neighbors since Dallas either.  It was a nice surprise!

And then there was Clarke…  who thought if he laid still enough, I might accidentally pack him up and take him to LA with me.  No such luck Clarkester!

Breakfast: Almond Milk Irish Oats with Bananas and PB2

Lunch: Cornbread and Portobello Chili

Dinner: Matzo Ball Soup with Broccoli Slaw

After spoonfuls of chili and handfuls of cornbread throughout the day, I was barely hungry for dinner.  When I finished with work, I packed up the remaining chili in single serving mason jars, stuck it all in the freezer, and forced my full belly to think of something else to make.  Matzo ball soup!

The Little Spoon

I prefer using little spoons and being the little spoon, almost always.

The only exception I can think of?  Chili, cause big spoons and chili are pals.

I figured I’d get one last chili sesh in before temps refuse to dip below 95.

Finding a dairy-free faux meat crumble was a struggle, so much of a struggle that I gave up.  The recipe in my head quickly shifted to portobello mushroom chili.

FoodFash’s Portobello Chili

2 tablespoons olive oil

1 yellow onion, chopped

1 green pepper, chopped

3 cloves garlic, crushed

2 portobello mushroom caps, chopped

2 cans spicy chili beans

1 can black beans, drained

1 can kidney beans, drained

1 can diced tomatoes

1 can tomato paste

½ can of water

1-2 tablespoons chili powder

1 teaspoon cayenne pepper

1 ½ teaspoons salt

2 teaspoons dried oregano

Heat olive oil over medium heat and add the onion, green pepper, and garlic.  When the onions are translucent, add the portobellos.  Add the remaining ingredients when the mushrooms look wilty (technical term) and simmer over low heat for 30 minutes.

Thirty simmering minutes give you plenty of time to make some corn bread.  I ate a dry piece with my chili, slathered another piece with Earth Balance/agave nectar, and called it a night.

I’ll probably continue to add mushrooms to my chili because they add a slightly meaty bulk.  However, the lack of meaty texture left me wanting.  I’ll be heading to Whole Foods tomorrow in search of some dairy-free density to add to my leftovers!

Spring Has Sprung

Yoga in the park has to top the list of perfect ways to celebrate the arrival of spring.  There’s just something about doing sun salutations in the sun that seems oh so right.  And thanks to Happy Buddha Yoga Lounge and flawless Tampa weather, I get to experience this kind of right (almost) every Sunday.

A sunshiny, 80 degree practice = A crowd of shiny, happy people.

After practice, we headed across the street to Pizza Fusion to take advantage of my Living Social coupon.  At the risk of over-using the word ‘perfect’ in this post, Pizza Fusion was the perfect place for Chrissie, an urban planner, and me, the product of an urban planner, to have our post-yoga meal.

We shared the Farmers Market pizza on multigrain crust with soy cheese.  You could have just changed the name of this pizza to the Kristin Special, cause I wouldn’t have done one thing differently.

Besides having beyond clean plate club worthy pizzas, they are also the most socially responsible restaurant I have yet to encounter.  Hybrid delivery vehicles, giving customers discounts for bringing back pizza boxes, using either 100% recycled or 100% biodegradable everything?  Lucky for me I loved the pizza, but I have to think that even if I didn’t, I’d still return out of principle!
