The Good Stuff

If it weren’t for the completely awful project that consumes my working hours, you’d have a tough time convincing me I’m not dreaming these days.  Every day since my arrival has been filled with so much of the good stuff, that I can’t even let the “bad stuff” phase me.  Bad project?  Pshhh…  Fire?  Double Pshhhhhh.

After work today, I put on my sneakers, grabbed my sacks, and walked to the best whole foods on this fine, fine planet.  This picture doesn’t begin to do this store justice, it’s huger than huge.  And each and every square foot of its hugeness is filled with the friendliest folks ever.

 I picked up some much needed groceries, looking forward to a time when my kitchen is a little more stocked and my market trips are a lot less expensive!

I snacked on some stuffed grape leaves while this sandwich was toasting and then, with a wholehearted grin, gobbled the whole thing up!

I’ve had my eye on Black Swan Yoga since the moment I figured out which area of Austin I wanted to live in.  The studio is steps from my apartment, they offer more classes at more times than you could ever imagine, and you can tell just by reading their website that the vibe is spot on.  When Andrea suggested meeting up for another workout after last night’s boot camp class, I had my fingers crossed she’d want to check out Black Swan.  Finger crossing was unnecessary as she was already a fan.

The power class was great!  It ended up being the perfect amount of strength and stretch for our already aching tush and thighs.  I haven’t been this happy with a studio since YogaSport in Dallas.  Yay Austin!!

Breaking In The Stove

So…  If you follow me on Instagram, you may have seen the pictures of charred pajamas on Saturday.  The movers accidentally set a box and my new stovetop on fire.  Total disaster.  But my spirit refuses to be broken.  And after I cleaned up fire extinguisher dust and finished unpacking boxes, it really didn’t seem that bad.

In fact, it seemed like the perfect time to get back to it in the kitchen.  I decided to put one of the three working burners to use by making a veggieful omelet.

I sauteed asparagus, spinach, crushed red pepper, garlic, and a little butter until the veggies were fully cooked and then set them aside.  I poured two beaten eggs onto a well-greased pan, added the veggies to one side, topped with fresh mozzarella, and waited for the egg to cook all the way through.  When all signs of raw egg were gone, I folded the other half of the egg over the veggies and cheese.

The omelet seemed large enough for two at first, but it turns out it was just large enough for me.  After two weeks of sketchy bottom-of-the-freezer meals and take-out…  I can’t tell you how glorious eating this many greens for breakfast was.  It was also the perfect fuel for a the most errand-filled day ever.

Bamboozled, In Pictures

Breakfast:  Peanut Butter on Sprouted Wheat Toast

Lunch:  Bamboozle Savory Tofu Banh Mi

Dinner:  Bamboozle Vegetarian Pho

It was very apparent as I pulled the last slices of sprouted wheat bread out of the freezer this morning, toasted them, and spread them with peanut butter, that I was going to be a very hungry girl today if I didn’t order some kind of take-out.  Thankfully, Bamboozle has a $20 minimum for delivery, or else I would have never considered ordering dinner at the same time as lunch.  Because of this freakishly abnormal foresight, I was able to run a boat load of errands, get my hair highlighted one last time in Tampa (I’m going to miss Helena SO much!), and almost finish packing.  The movers are coming in the morning and I have a few random things that I wish would just pack themselves!
