I’ve been anxiously awaiting the arrival of replacement headphones all week with the goal of getting back into a workout routine this weekend.  I am determined to be as obsessed with running as I was when I lived Dallas.  As a tribute/motivator, I created a playlist similar to what I would have ran to during that time.

I charged the headphones, imported the playlist into the Personal Running Trainer app, and prepared a pre-running snack: a dab of peanut butter, a smaller dab of jelly, and a teaspoon of…  wait for it…  BEE POLLEN!  My friend Adam told me about the uber long list of bee pollen health benefits earlier in the week and ever since I’ve been upping my daily intake.

The snack, playlist, and running app worked together seamlessly to keep me motivated during the entire 45 minute trek.  I was really pleased with the app minus one thing – nothing signaled mid-way through the workout that I should turn around (next time I’ll pay attention to what song hits around 20 min).

When I got home, I made another new-to-me breakfast.  Check back tomorrow for the recipe!

Look Out Weekend!

Isn’t this how it always pans out?  You’re exhausted all week and you promise yourself a nice quiet weekend and then…  You get an invite to something too fun too pass up?  Oops?

My friend Kelly emailed me earlier today about a non-touristy sunset cruise that she and the other Kelley are going on tomorrow and asked if I’d like to join.  I hesitated out of pure sleepiness, but knew this was something I couldn’t turn down.

You see, both Kell(e)ys are moving soon: one to Jacksonville and one to Spain, so I need to get as much Kell(e)y time in as humanly possible.  And there are about a gazillion cherries on top of this cakey invite, some of which include:

1.  The cruise is BYOB

2.   Kelly is kind of a big deal at a local wine rep and will, for sure, bring the best bubbly ever.

3.  Kelley is famous for her veggie trays.

4.   I’ve been looking for an excuse to make this vegan layer dip

5.  FULL MOON!!

So party, party it is, because I don’t see myself making my way back over the bridge after boating.

Now on to the dip…  that I totally jacked from my college roommate, Emily, and modified to be dairy free.

Mix one package of dairy-free cream cheese with taco seasoning to taste.  I used about 1/2 of a large packet, but it’s important to sample periodically because it can get super salty, super fast.  Then layer refried beans, taco seasoned cream cheese, and salsa in a casserole dish (or pie plate).  Top with olives and sliced jalapenos (that I forgot and have to pick up at the grocery store tomorrow on my way to St. Pete).

Serve with tortilla chips or health it up by toasting sprouted corn tortillas.

Pop Yum Pop

Here it is!  My favorite childhood snack: popcorn and nutritional yeast.  I might have been the only kid in town that didn’t care for movie popcorn.  And you better believe I was the only kid in town that requested yeast on the regular.

My mom had an ancient air popper, or so I thought.  It turns out that poppers haven’t changed much over the last twenty years.

Well… Except for the fact that the like-model popper that I bought spewed out scorching hot kernels and gave me awkward popcorn burns.  Not cool.

So I bought the carnie-like popper pictured above and, since then, popcorn making has been a lot less painful.

All you have to do to recreate this snack is pop some kernels and sprinkle with melted Earth Balance, salt, and nutritional yeast, in that order.  And!  Since nutritional yeast has 18 amino acids, 15 minerals, and is a super duper source of B-complex vitamins, there’s nothing guiltful about this guilty pleasure.

Hail Merry IS The Giveaway!

I first fell in love with Hail Merry snacks last summer on the last stop of my two week, whirlwind workation (work mixed with vacation?) in Dallas.  The tarts were yumtastic, so I wasn’t surprised when I heard their blonde macaroons were up for a VegTimes Foodie Award.

Their promotions department sent me a kind note a few weeks ago thanking me for my continuous support and informing me of the above mentioned nomination.  I promptly voted, but also wanted to do something more to help this used-to-be-local-for-me Dallas product gain exposure.  Aha, a contest!  And a really good contest at that!
