Easy Peasy Chicken Snack

Healthy Snack

There are only so many walnuts and pistachios I can snack on throughout the day before I become oh so bored.  But then I went tubing last weekend and had the fear of not only being bored, but starving.  So I picked up some boneless, skinless breasts and created a rapid snack that I could take with me on the river.

Chicken Seasoning

I’m really loving the spices and freeze-dried veggies/herbs I picked up at a spice shop while in Milwaukee and thought they’d work well with what I was trying to accomplish.  The Caribbean Calypso Seasoning is so vibrant and perfect for seafood and poultry. Perfect.  And the freeze-dried scallions are more addictive than you could ever imagine.  They’re like the way healthy version of french fried onions.

Seasoned Chicken

I boiled the chicken, cut it into cubes, sprinkled liberally with both seasonings, and packed away in to-go containers.  This snack was filling with a flavor that kept my attention.

Chipotle Salsa

Chipotle Salsa

There are a few foods that I just can’t bring myself to buy pre-made anymore. Hummus and salsa top that list.  Hummus and salsa are also some of the easiest, most crowd-pleasing party food contributions – a coincidence I can totally live with.

Halved Tomatoes

I’ve experimented with homemade salsas before, but today I wanted something smoky, something close to the El Alma salsa I love so much.  I found a recipe that sounded exactly like what I was looking for {and had the picture to prove it} on What’s Gaby Cooking.

Blendtec Salsa

I didn’t love the idea of using canned tomatoes or peppers, but I had a hunch that was the only way I was going to achieve that deep, smoky flavor I was looking for. And in an unbelievably short 90-ish seconds, the recipe was validated.  Gaby’s salsa was so, so good!

I also… have a newfound obsession with chipotle peppers in adobo sauce.

Hummus Deviled Eggs

Hummus Deviled Eggs

After reading one of the many things you’re doing wrong lists out there, I had to try peeling boiled eggs the right way.  I started with Martha Stewart’s instructions on how to make perfect hard-boiled eggs. And then finished by placing the boiled eggs in a large bowl filled with ice water and one teaspoon of baking soda.

Let me just tell ya, this was the least stressful egg peeling that’s ever gone on in my kitchen.  From this point forward, I’m a baking soda believer.

And then I went on to experiment with the ever so classic deviled egg.  Truth be told, I had some 365 light mayo in my fridge that tasted like poison and I needed an alternative.  Hummus seemed like the logical route.  This recipe needs some tweaking, but I’ll give you the ingredients and measurement starting points to get going.

Sesame Cashews

Having a roommate, especially a male roommate, comes with having a kitchen full of snacks that you’d never ordinarily have.  Lots and lots of Trader Joe’s snacks, staring you in the hungry face, whenever you cross the kitchen border.

The best thing I can do is recreate a healthier version.

So that’s exactly what I did.  And they were Max approved!
