Homemade Purple Cauliflower Crust Pizza

Purple pizza crust was not the intent when I cruised through the grocery aisles last night. Regular old, off-white was the variety on my list.  But if you can believe it, Whole Foods was out. So I picked up the purple {with no regard for how it might taste} and went on my way.

I prepped the cauliflower crust almost per the directions in this recipe that I found through Pinterest.  And then brought out the mandolin slicer to make pizza toppings equally as beautiful.

And then I baked and broiled and enjoyed this feel-good pizza.

Eggplant Pizza

Eggplant Pizza

Miami Beach adventures and NYC visitors knocked me straight out of any routine.  Grocery shopping hasn’t been a real thing in quite some time. Instagram activity is slow and FoodFash activity is even slower.  And when I ever so subtly mentioned to my mother than I’ve been living off of frozen dumplings.  That gasp…  It was time to shop the perimeter.

Sliced Eggplant

Eggplant, tomatoes, and basil sandwiched with a couple of cheeses and sprinkled with salt, garlic powder, and pepper.  I used this post as my eggplant cooking guide and made the rest up on the fly.

The only thing I wish I would have done differently is double the amount of tomatoes stacked on each piece of eggplant.  Next time, eggplant pizza, next time!

Whooped Pants Pizza

There were two things that got me through tonight’s workout at H.E.A.T. Bootcamp:

1.  Meeting Andrea.  When Katie found out I was moving to Austin, she introduced me to Andrea, who had recently moved from Atlanta to Austin, via Facebook.  We’ve been chatting up a storm over the past few months and it was great to finally meet her!

2.  The pre-prepped batch of pizza dough that was waiting for me to cover it with a bunch of goodness when I got home.

I’ve been on this crushed red pepper/sriracha/spicy kick for the past few months, so I couldn’t help but purchase this gynorm jalapeno at the market over the weekend.  I was a tad nervous that fresh japs would be too intense, so I sliced them on the thin side.  It was a good move.

As far as the rest of the toppings go, I brushed the dough with olive oil, topped with sliced tomatoes, portobellos, and the thinly sliced jalapenos.  I brushed everything with olive oil again to ensure nothing turned dry or crispy and baked in a 425 degree oven for 8 minutes.

When the veggies were looking good and wilted, I added fresh mozzarella pearls and baked for another 5-ish minutes until the cheese was melted.  I am a huge fan of cooking with fresh mozzarella, but it tends to release a TON of water when it cooks.  I remedied the soggy situation with a paper towel after baking, but I’m wondering if I should squeeze some of the excess moisture out of the cheese prior to baking next time.

And even though my go-to pizza toppings for the past decade have been spinach and artichokes, I’ll happily push those aside for mushrooms and jalapenos.  Spicy umami is where it’s at!

The Fear

A cross-country move is bound to create a laundry list of fears.  I have them, spectrum A to Z style.  And even though I’ve done this move before, almost to a tee, the same fear gets me every time.  Will all of my precious-to-me cargo arrive safely to my new home?

I can tell you with fair certainty that it probably will.  And I can tell you with complete certainty that the three-hundred pound man with a goatee and two-size too small muscle tee that’s moving my stuff won’t want anything to do with my favorite orange work dress, uber faded LBD, and brand new yellow jeans.  But!  The fear remains.  And it will be there, annoying me softly, until every last container is unloaded and unpacked.

So thirteen moves.  This will be my thirteenth move since my mom dropped me off at college 10-1/2 years ago.  And yeah that’s too many moves to be having this same darn fear.  But I’ve become a pretty solid packer/mover in all other aspects along the way, so that’s got to count for something, right?

Like contractor bags are a must.  Don’t pack your clothes in garment boxes, stick to contractor bags.  They’re tough (tuff), cheap, and hold more than you could ever imagine.  Tie the tops carefully and you can probably use them again for a hefty chore at some point down the road.

Storage totes.  I used storage totes when I moved back from Dallas and it was a total game-changer.  No worries about too-heavy boxes with no handles.  No trash when you arrive.  Just storage for the stuff that isn’t meant to be unpacked when you get there.  Who knows, they may even come in handy for your 14th move.

Pizza.  Eat crappy pizza while you’re packing.  Don’t dirty every dish in your kitchen, eat pizza and pack your dishes instead.

Oh and music.  Music is key.  Listen to songs that remind you of the time you spent in your current space (maybe on repeat).  I promise you that there will be a time when you miss these moments more than you could ever imagine.  These songs will forever give you a solid dose of nostalgia about the last nights you spent in your current town, the nights you spent stuffing your clothes in contractor bags, packing heavy storage totes, and eating way too much crappy pizza.
