A Hungry Day, In Pictures

Breakfast: Gala Apple with Peanut Butter

Snack: Spicy Boiled Peanuts

Lunch: Leftover Kale & White Bean Soup 

Snack: Hummus & Carrot Chips

Dinner: Roasted Portobello & Tomato Sammies

Dessert: Tofutti Chocolate Covered Flowers Pop

I was dominated by hunger today.  No matter what I ate, I was ready for something else.  I’m even eating green olives right now as I type!

But I don’t want you to think that my lack of fullness had to do with lack of meal satisfaction, because that couldn’t be further from the truth.  The leftover soup from last night with a piece of warm crusty bread and Earth Balance was a yumtastic lunch (so yum that I’m bringing some to the office tomorrow to share).  And!  AND!  The mini sammies that I made for dinner tonight were even better.  I’m getting so good at these babies I’m having difficulty remembering a time when I was intimidated by portobello sandwiches!

A Day In DC

Sooo… It’s been a whirlwind past few days.  I rushed home from Gainesville on Sunday to a laptop full of work and an empty suitcase in need of packing.  And by 7 AM Monday morning, I was scarfing boiled eggs and a V8 at the airport before heading to DC.

As soon as I arrived it was work, work, work and then Whole Foods for salad bar lunch and then more work.  The Alexandria, VA Whole Foods’ salad bar totally kicks T-town’s butt!  I got a ton of zesty kale with some balsamic tofu, Asian noodles, beets, and hearts of palm.  So random, so delish.

Helllooo home til Thursday!

And dinner?  Mediocre hotel salmon dinner.

Rather than focus on the blah-ness of being busy, let’s talk about the zesty kale.  I could eat it every day.  Rather, I want to eat it every day.  I’m obsessed.

Back Into Sriracha, In Pictures

Breakfast: Leftover Pancake & Boiled Egg

Snack: Apple (had another after lunch too!)

Lunch: Leftover Asian Ravioli (that I burned…)

Snack: Sriracha Deviled Egg (for one)

Dinner: Mini Sriracha Hoagies

 Two notes:

1.  Even though I burned my lunch leftovers, they were still SO good!  I’ll be looking for an excuse to make these again soon.

2.  I still agree with my June 2011 self that every sandwich should be topped with a sriracha/tofutti spread – such a tasty mix of creamy, spicy.

Greens For Granted, In Pictures

Breakfast: Airport Food

Lunch: Orange Faux Chicken and Mushroom Barley Soup

Dinner: Spaghetti & Salad

It’s so great to be home!!  Even though nothing I ate today was ideal (airport, frozen meal, then Junior League meal), I was able to stock up on a ton of produce for tomorrow.  Light at the end of the tunnel.  Swear I’ll never take greens for granted again.
