Game Day Breakfast

As a second generation Florida Gator, I learned the importance of a substantial gameday breakfast early on.  And since I’m a savory breakfast kind of gal, egg sandwiches have always been my gameday go-to.

HEB Spicy Corn Relish

When I opened my September HEB Primo Picks box, visions of spicy egg goodness immediately popped into my head.  I toasted up some sprouted wheat bread, topped with sliced avocados, an over-medium egg, and HEB‘s Spicy Relish that Corn.  I dove in with a fork and knife (which were oh so necessary) and immediately wished I had more avocado so I could treat myself to seconds – it was SO wonderful.

Texas Tea and Vodka

Wonderful and… hot!  I dug through the box to see what I could snack on to calm the burn, when I found the perfect thing: Peach Texas Tea.  And then I thought “if this is a gameday breakfast, then surely this tea should be turned into a cocktail”.  So there ya have it!  As I cheer on the Gators in Austin this season, I’ll be enjoying a Texa-fied start to my gameday with a spicy corn relish egg sammie and a Texas Tea with a splash of Tito’s.

The Last Of Our Sonoma Eats

Prior to traveling to Sonoma, I had little expectation of anything other than drinking wine with family and friends.  I didn’t plan this trip to a tee like I typically would.  Heck, my mom and I even forgot about the whole rental car thing until the day before.  We made reservations at Cafe La Haye and Foreign Cinema and that was the extent of our planning.  And it all worked out.  I should make note of that.

The day of the wedding, we walked through Sonoma Square and stumbled upon a trail and a few wineries to visit later in the day.  By the time we cleaned up, we were ready for another meal.  LaSalette was another restaurant that was recommended to us, so we headed that way.  We had a wonderful and wonderfully light lunch of mussels, cucumber gazpacho, asparagus, and a few tapas (not pictured).  In addition to having tasty fare, LaSalette was off the beaten path and had a bustling lunch crowd.  I wouldn’t hesitate to visit again.

Fast forward to after the wedding, I woke up fairly well rested.  It came in awfully handy to have my mom on call to pick me up from the wedding when I was at the point of feeling done.  And because of that, we were able to check out of the hotel early and get a nice breakfast before the hour trek to San Fran.

We had a wayyyy heavier than anticipated breakfast at Community Cafe, where a few friends had eaten the day before.  Truffled eggs with asparagus, mushrooms, and cheese on top of a hearty slice of bread and a NY strip breakfast burrito.  Holy cow.  We were in a total food coma until we arrived in San Fran, when we just so happened to be ready for our next meal.

Weekday Eggs

I am way boring when it comes to weekday breakfast.  Greek yogurt or flax oats have been my staple sit-at-my-desk-and-eat-while-I-work morning meal for entirely too long.  And since I’ve cut out Greek yogurt in an effort to get back to the land of non-dairy (gasp!), I had to come up with an oatmeal alternative, stat.

I dabbled in weekday eggs a few months ago, but baking breakfast (along with dinner) every other night and dirtying up a ton of Pyrex dishes is about as far from realistic as it gets.  But now that I finally have a muffin pan again, it dawned on me that weekday eggs can be a thing.  An awesome, un-boring, AM veggie kind of thing.

FoodFash Weekday Eggs (yields 4 servings)

14 ounces of veggie sausage (or 1 lb of turkey sausage)

6 eggs

1 cup of broccoli floretts, chopped (or any green veggie)

hot sauce to taste

Preheat oven to 400 degrees.  Slice sausage into 12 equal parts and smoosh a piece into each muffin hole.  Bake until sausage is cooked all the way through (about 10 minutes).  Remove sausage from oven and set aside.  In a medium sized bowl, beat eggs.  Add veggies and hot sauce, noting that salt is unnecessary due to the saltiness of the sausage.  Spoon about 2 tablespoon of eggs over each piece of sausage.  Place back in oven and bake for 15 minutes or until eggs are cooked all the way through.  Put three frittatas to a sandwich bag and store in the refrigerator.  Reheat for 30-45 seconds in your office micro and enjoy!

If you’re looking for a way to make your co-workers and Instagram followers drool in a jealous stupor, eating these bad boys for breakfast will surely get you there.  And a bonus?  I found myself much more energized during my lunch-hour spin class.  I can see myself making these weekly, subbing with other greens and “meats” to keep it interesting.

#HLS12 – @Wild_Harvest Breakfast

As exciting as trying local restaurant hot spots has been since arriving in Cambridge/Boston on Thursday, for bloggers, the first meal of the Healthy Living Summit is just as exciting!  Yummy food that doesn’t make you feel rotten is always a win.

There was a super huge spread of fruit, yogurt parfaits, muffins, and a few savory hot meals.  But my favorite part of breakfast was Kelly’s Greek inspired egg scramble , which had spinach and feta.  Now that two hours have passed and I’m already thinking of lunch, I’m wishing I had gone back for seconds!

After breakfast, we separated into small groups for icebreakers.  Heather asked me if I was willing to be the head of the purple sticker herd and naturally I said yes.  Not only do I enjoy this sort of thing but Heather is the kind of person you want to be around, always, and it’s darn near impossible to say no to the Heathers of the world.

We went around the circle, answering randomly ridiculous questions about each other.  It’s always so interesting to see how people respond to the unexpected.  It was giggle-inducing for sure.  And at 9 AM in a room full of tons of people you’ve probably only met in the virtual world, giggles are good.

While the bulk of the Summit dabbled in some Crossfit action, my roommates (Emily & Rachel) and I went on a stroll to Boston.  It was a little dreary out, but it was a welcomed change from the typical August heat.

Time to go back into HLS sessions!
