Cucumber BLT

Cucumber BLT 4

I wish I could take complete credit for adding cucumbers to an ever so classic BLT. But I can’t. A few weeks back, I visited Zed’s in north Austin and couldn’t resist ordering this sandwich. And before I could even swallow my first bite, I knew that I’d forever be adding cukes to BLTs.

It made total sense.  Whenever cucumbers are an option when building a sandwich, they’re the first option I choose.  They have the incredible ability to lighten up anything with their cool, delicate flavor.  And I’m always down for the addition of something crisp.

Bite-Sized Banh Mi

February 14, 2016 by Kristin

Homemade Bite Size Banh Mi Recipe

Bite-sized banh mi might just be the most adorable food to ever come out of my kitchen. Inspired by an Asian-themed tea party,  these tasty, little sandwiches are filled with tender meat, crisp vegetables, and spicy mayo.

Shredded Slow Cooker Pork

And other than the bit of muscle this recipe requires for chopping vegetables, it really only involves some slow cooker and assembly action. Banh mi are definitely not as intimidating as I imagined {which is usually the case}.

Homemade Lobster Roll

September 27, 2015 by Kristin

Homemade Lobster Roll on Gluten-Free Bun

There’s a ninety percent chance that when I ask my roommate for a blog idea, he’s going to respond with lobster {or crab}.  Ninety percent!  You’d think at this point, I’d start answering my own question. But nope, I still ask. And every once in a while, when I’m making my more-than-weekly trip to the seafood department, I’ll spot lobster tails on sale and I’ll pick some up. Maybe this is all part of his master plan..

Broiled Butterflied Lobster Tails

This time he went a mini step further and suggested crab dip. I couldn’t for the life of me justify making/eating crab dip on a weeknight.  But what I could justify was a lobster roll, because.. I can always justify a lobster roll.

Homemade Lobster Salad for Lobster Roll

And there’s really nothing to a lobster roll.  Lobster {obviously}, celery, parsley, mayo, salt, and pepper – mixed and stuffed in a toasted bun {I used Udi’s gluten-free buns}.  A traditional lobster roll’s bun is slathered in butter and then toasted.  But calories aside, I’m rarely a fan of greasy bread.

For an even lighter version, I’m certain lobster salad lettuce wraps would be out-of-this-world good!

Cucumber & Cilantro Chicken Salad

August 1, 2014 by Kristin

Cucumber Chicken Salad

Have you ever been such a busy bee that when you came home from the grocery store you realized, not only did you forget something, but you brought home another thing that already had fair representation in the fridge?  Like cilantro. I’ve purchased cilantro three times  in less than a week.  Not good.

Cubed Chicken Breast

Luckily my roommate’s gym schedule is about an hour behind my yoga schedule. And since we both go to the grocery store on a daily basis {I wish I was joking}, I knew he could pick up that onion that slipped my mind.  And as far as the boat loads of cilantro?  I’d just whip up a batch of super summery chicken salad and pretend the overstock was all on purpose.

Chicken Salad Ingredients

And then I’d be thankful.  Because chicken salad with cukes, red onions, cilantro, lime, and homemade mayo is such a darn good combo.  Season with salt, pepper, and a pinch of cayenne pepper and man oh man, you’ve got yourself something special.
