Quick, Veggie-Filled Macaroni And Cheese

Macaroni and cheese has been at the top of my favorite foods list for as long as I’ve been able to request macaroni and cheese. And even though it was a very long time ago, I’m certain that I fell in love at the time of my very first, cheesy bite.

 

But because it was a known thing in our house that a meal wasn’t a meal without a green vegetable, veggie-filled macaroni and cheese quickly became a top requested dinner. As an adult not much has changed except for the available brand options for boxed macaroni and cheese. I’ve since passed down my love of veggie-filled macaroni and cheese to my boyfriend’s three year old. This dish has been a total life-saver on school nights and plan-packed weekends. Stuffed Sirloin: Spinach, Artichoke & Feta

Spinach, artichoke, and feta is an all-time favorite combo of mine.  Pizza, pasta, omelets, whatever the vehicle, this trifecta is sure to win me over {and I bet it would win you over, too}.

It’s shocking, really, how long it’s taken me to pair meat with such an established love.  But tonight, it happened.  I whipped out the tenderizer and fancy skewers and stuffed, stuffed, stuffed that sirloin.

Stuffed Sirloin Steak

What came out of the oven resembled little, tender meat “tacos” bursting with veggie flavor and a hint of tangy feta.  What’s more, this recipe is easily multiplied for more servings and stores wonderfully for lunch the next day!

Homemade Dr. Praeger’s Spinach Cakes

While diving back into Pinterest land for bedroom inspiration, I allowed myself the more-than-occasional food pin distraction.  And during one of these food tangents, I was drawn to a pin showing a stack of spinach pancakes.  I clicked on it, secretly hoping the post would outline a homemade recipe for Dr. Praeger’s spinach cakes {one of my favorite freezer staples}.  And it did!

Turnips

I really liked Meg of Veggie Staple’s recipe, but knew immediately that I wanted to try a few things differently.  Like more spinach {puréed} and turnips in place of potatoes.

Spinach Pancakes

The turnip version yielded a lower carb, lower calorie, higher calcium-containing cake. And puréeing the spinach made for the most vibrant cake in all of the land!  I’ve enjoyed them solo as a quick snack or topped with an egg for a nutrient-dense breakfast.

Turnips have a slight bitterness, so if you’re not a turnip fan, try replacing half of the turnips in this recipe with a white or sweet potato.

White Wine & Mango Shrimp Skewers

White Wine Mango Shrimp

Even though summer grilling recipes are every which way you look, I’m still not over grilling.  In fact, I’m so much in the middle of it that I dreamed up a summery marinade that I plan on using straight through the winter when I’m longing for sunshine.

Shrimp Kabobs

This recipe is a sweet and savory combination of pinot grigio {or any white wine}, mango, onion, and garlic that completely compliments the skewer components. Leftover skewers also keep well in the fridge and can be served hot or cold the next day.
