Homemade Marshmallows - Vanilla & Chinese Five Spice

It’s a fact, the holiday season turns my little sweet tooth into something major.  The sugary treats that I’ve thought about making all year come to fruition.  And my ordinarily blackest black coffee welcomes a little flavor, especially in the form of a homemade marshmallow.

Homemade marshmallows are super duper easy and are a perfectly sweet canvas for holiday flavors. And since I’ve been incorporating Chinese five spice into everything these days, spiced marshmallows for Christmas coffee seemed like the way to go.

Gingerbread Lofthouse Cookie Recipe

Gingerbread Lofthouse Cookies

Cookies are not my weak spot.  A brownie sundae?   You bet ya!  But cookies have never really been my thing. Unless.. it’s a container of those fluffy, cakey cookies with a perfect circle of frosting with sprinkles that can typically be found in the bakery.  That kind of cookie can be my thing.

I did some super sophisticated Google searching: “fluffy, cakey cookies”, “super fluffy cookies”, “cake-like cookies”.  From there, I found out that my guiltiest cookie pleasure has a brand name, Lofthouse Cookies.  I found a few blogger recipes, like this one from Two Peas & Their Pod, and realized I’m not the only one with an obsession.

Gingerbread Christmas Cookies

I quickly made this recipe my own and modified to be gingerbread-esque, using brown sugar, molasses, freshly grated ginger, and Chinese five spice {my holiday fav}.  And now I can’t stop, won’t stop, taking a cookie with me every time I leave the kitchen!

Vanilla Bean & Honey Whipped Mascarpone

Berries with Whipped Mascarpone

I’m going to start this story at the end – at the moment I couldn’t take a picture that I liked for the life of me. I looked at my Paris inspired dish of berries topped with whipped mascarpone. I glanced over at the stack of souvenirs from the recent Paris trip that sparked the inspiration. And I thought.. Emily wouldn’t mind if I used the adorable black cat kitchen linen I purchased for her abroad, would she? And just like that, I had a photo. Sorry Em {it’ll make its way to you shortly}!

Rewinding to the beginning of the story, this whipped mascarpone was inspired by our first dessert in Paris.  We stumbled upon a little place called Chez Mademoiselle where, when it came time for dessert, they served their sweet dishes with a pot of mascarpone whipped cream {like unlimited mascarpone whipped cream!}.  And it blew my mind.

Meyer Lemon Pudding

Meyer Lemon Pudding_

Lemon curd is one of my all time favorite eats. The love stemmed from baking lemon meringue pies with my grandmother every Thanksgiving and Christmas from the time I could balance on a step-stool to reach the stove. My little arm would get so tired from stirring the thick and bubbly filling. And I’d always pretend I scraped as much of the filling as I could into the pie shell, but really I’d leave a fair amount in the pan so I could eat the rest with a spoon.

Years later {and thankfully while living alone}, I discovered that lemon meringue pie filling and lemon curd were the same-ish.  I started buying a fancy brand of lemon curd and eating it by the spoonful, similar to peanut butter, for dessert.  But knowing how much butter is in lemon curd, it was a habit that needn’t continue.

Meyer Lemon Pudding 2

This meyer lemon pudding recipe is a hybrid between lemon curd and stirred vanilla pudding.  Tart like curd, creamy like pudding, but without any of the dairy that’s common in both.  Made with coconut milk and coconut oil, this dessert is completely dairy free and completely delicious.
