Germinated Rice wtih Tomatoes and Mozzarella

Our first dinner at the Casale Di Valle was memorable in so many ways.  All of the Storytellers were together around a single table for the first time.  We were familiar faces, familiar voices, but we didn’t know each other at all {a frequent feeling in the blogging world}.  And over the course of our first dinner, a home cooked meal by Chef Ana and an array of DaVinci Wines, we’d skip straight past acquaintance to friendship.

The meal consisted of a variety of grilled meat and veggies and a grain salad I would never forget: farro with fresh tomatoes, fresh mozzarella, olive oil, and a simple seasoning of salt and pepper.  Such an ordinary list of ingredients may leave you wondering why this dish was so memorable.  But its simplicity allowed the flavor of each ingredient to shine. And it was the first time I had ever noticeably appreciated the taste of olive oil.  I’d be sure to bring a few bottles of Chef Ana’s olive oil of choice home with me.

Oh and the wine!  The wine allowed us to enjoy each other’s company long past the point of jet lag exhaustion.  We started with Pinot Grigio and, from there, moved to Chianti and Chianti Riserva.  This meal would also be the the first of many meals where all three wines {and occasionally the Brunello} would be passed across the table, from friend to friend, to complement our meal.

My version of Chef Ana’s recipe below pairs wonderfully with DaVinci Chianti.

Vegan Mashed Potatoes With Garlic Chives

Vegan Mashed Potatoes

My entire life, I’ve been fooled into thinking that mashed potatoes take so long to make and are so special that they are a side reserved only for Thanksgiving and Christmas.  And even after years of being one of the kitchen leads during the holidays {knowing that mashed potatoes are not tough} they still feel like a special occasion thing.

With that said, nothing particularly special happened today to warrant mashed potatoes.  I’m about to finish my first restaurant project {the construction portion}. And I’m about to head to Italy for the trip of a lifetime.  But nothing out of the ordinary happened that called for mashed potatoes today.

But as I wandered around Whole Foods after yoga {an atypical 40-ish minutes of wandering}, I kept thinking about potatoes.  And not quite the holiday potatoes I’m accustomed to, but vegan potatoes with garlic chives that I would later confuse by pairing with a steak.  Vegan potatoes with garlic chives that my steak-eating roommate said was the best part of his meal.

Homemade Chipotle Ketchup

Homemade Chipotle Ketchup

There is no shortage of housemade ketchup in Austin.  So much so, that I’ve not only developed a taste for the condiment, but the desire to make my own has crept upon me as well.

And since I still had leftover chipotle peppers in the freezer {from salsa making} and I still can’t get enough of that smoky spice, I decided chipotle ketchup was the way to go.

I was surprised how much the ketchup lightened after a few seconds in the Blendtec.  But after the initial confusion of red turned orange, I fell in love with my housemade ketchup.  I jarred some up for a friend’s party this weekend and added ketchup to my unpublished list of store-bought things I plan to home-make from now on.

Avocado Cream for Quesadillas

It’s been quite some time since I’ve done the quesadilla thing. The beany, cheesy, spinachy quesadilla thing that makes me all sorts of happy.

And tonight, the quesadilla thing got even better because I didn’t go for a typical dollop of sour cream.  And maybe it’s because I couldn’t {for the life of me} find the sour cream at Whole Foods.  So I headed to the Greek yogurt area, grabbed a small 2% plain, and headed to the produce department.

It was there I found the tiniest, ripest avocado that I would later season and whip with yogurt to make my new favorite thing to dollop.
