The holidays are quickly approaching, which means get-togethers and baking galore. And while our social media feeds will be filled mostly with sweet treats and holiday meals, I’ll continue dreaming up savory breakfasts {my favorite!}.
Pillsbury crescent rolls are a convenient {and delicious} way to wrap up your favorite breakfast ingredients. What you’d ordinarily stuff in a breakfast taco or kolache will work wonderfully wrapped in this buttery dough.
When I asked the Instagram world “what are your favorite ingredients to stuff inside a Pillsbury crescent roll?”, I was amazed at many creative responses I received! Jalapeño cream cheese, pepperoni pizza, spinach artichoke dip, cinnamon apples, Nutella, sausage. Every single suggestion sounded oh so delicious!
But the combination that won me over this go around was egg, bacon, green onions, and sharp cheddar. Let me just tell you, this is a glorious way to start a morning! Green onion gives the crescent roll a nice complexity and thick slab bacon adds a crave-able savory smoke. When prepared and heated up the next day, these breakfast crescent rolls are still top notch.

Bacon, Egg & Cheese Crescent Rolls

Ingredients
- 1 8-pack Pillsbury crescent rolls
- 2 slices thick slab bacon
- 3 eggs
- 1 tablespoon butter
- 2 teaspoons finely chopped green onion
- 1/2 cup shredded sharp cheddar cheese
Instructions
- Preheat oven to 400 degrees.
- Place bacon on foil lined baking sheet and bake for 20 minutes.
- While bacon is cooking, melt butter in a frying pan over medium heat.
- Add green onions and stir into the melted butter for about a minute.
- Crack eggs into and beat with a fork.
- Add eggs to butter and continue stirring gently over medium heat until eggs are cooked through, but still moist.
- When bacon is finished cooking, chop coarsely.
- In frying pan, portion eggs into eight equal lumps.
- Unroll crescent dough and place 1/8th of eggs, bacon, and cheese on the bottom/wide edge of each dough triangle.
- Gently roll and place on parchment lined baking sheet, making sure the edges with egg sticking out are facing up.
- Bake for 9 to 12 minutes or until crescent rolls are golden brown.
- Garnish with chopped green onion tops (optional) and serve.

Put anything in a croissant and I’m probably gonna love it, But these? These are breakfast perfection! I cannot wait to whip these up on a Saturday and see my kids’ faces light up! … well, if I decide to share, that is 🙂
