Spinach Pesto Linguini

I’ve been all about simple recipes this year. Simple chicken. Simple shrimp. Simple salmon. Why not post my favorite simple {and veggie-filled} pasta? Below is a recipe for spinach and pesto linguine that’s jam-packed with over 2 cups of spinach per serving.  Dig in!

Ingredients

  • 6 ounces egg linguine
  • 5 cups chopped baby spinach tightly packed
  • 3.5 ounces pesto

Instructions

  1. Fill a large pot with water and bring to a boil over high heat.
  2. Boil linguine per the package directions.
  3. Add spinach to water and linguine until spinach is bright green, about 20 seconds.
  4. Drain linguine and spinach in a colander and return to pot.
  5. Stir in pesto and serve.
