Vegan Mashed Potatoes

My entire life, I’ve been fooled into thinking that mashed potatoes take so long to make and are so special that they are a side reserved only for Thanksgiving and Christmas.  And even after years of being one of the kitchen leads during the holidays {knowing that mashed potatoes are not tough} they still feel like a special occasion thing.

Boiled Potatoes

With that said, nothing particularly special happened today to warrant mashed potatoes.  I’m about to finish my first restaurant project {the construction portion}. And I’m about to head to Italy for the trip of a lifetime.  But nothing out of the ordinary happened that called for mashed potatoes today.

Mashed Potatoes

But as I wandered around Whole Foods after yoga {an atypical 40-ish minutes of wandering}, I kept thinking about potatoes.  And not quite the holiday potatoes I’m accustomed to, but vegan potatoes with garlic chives that I would later confuse by pairing with a steak.  Vegan potatoes with garlic chives that my steak-eating roommate said was the best part of his meal.

  • Yield: 4 Servings

My entire life, I've been fooled into thinking that mashed potatoes take so long to make and are so special that they are a side …

Ingredients

  • 2 russet potatoes peeled and cut into 2
  • 3 tablespoons coconut oil
  • 5.5 ounce can culinary coconut milk
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • garlic chives finely chopped as garnish

Instructions

  1. Add potato slices to a medium sized pot and fill with water.
  2. Set the pot over high heat for 20 minutes, or until potatoes are tender, bringing to a boil.
  3. Drain the potatoes and add to the bowl of a stand mixer.
  4. Use the paddle attachment with bowl guard and mix potatoes until they are crumbled
  5. Add coconut oil to the potatoes and mix on a medium-high setting.
  6. While the mixer is going, gradually add the can of coconut milk.
  7. When the potatoes are a smooth consistency, add salt, garlic powder, pepper, and mix again.
  8. Serve immediately and top with freshly chopped garlic chives.

I rarely make mashed potatoes either, though I know it’s easy. Also, I’m so good at pair vegan sides with meat mains and vice versa. Confusing meals is fun. Thanks for the inspiration to eat more potatoes (like I needed an excuse).
