Being resourceful in the kitchen can {sometimes} get you into a bit of trouble. Most folks that find themselves without chocolate during a massive chocolate craving just simply do without chocolate for the time being. Me? I whip random ingredients together until I’m either sort-of-satisfied or surprisingly super satisfied.
After a week of gentle tweaks, I was super satisfied. A progression of hemp seed chocolate bars to coconut/almond chocolate bars to just coconut bars led me straight to coconut truffles. And now I have a bundle of sweet treats waiting for me in anticipation of any chocolate craving, big or small.

Ingredients
- 4 tablespoons unsweetened cocoa powder
- 3 tablespoons coconut oil
- 3 tablespoons culinary coconut milk {full fat or coconut cream}
- 1/8 teaspoon pure vanilla extract
- 1/16 teaspoon salt
- 252 milligrams stevia powder {6 stevia scoops}
- 1/2 cup unsweetened shredded coconut
Instructions
- In a small bowl, mix all of the ingredients together except for the coconut.
- Roll mixture into small balls, using about 1 teaspoon of the chocolate at a time.
- Place shredded coconut in a small bowl or on a cutting board.
- Gently roll chocolate balls in coconut until they are covered with coconut.
- Refrigerate for about 10 minutes and serve immediately.
- Keep truffles in the refrigerator as they will begin to melt at room temperature.

Do without chocolate for the time being? Ha ha ha no. I’m with you that the correct answer is mess around in the kitchen until the chocolate craving is satisfied. Goes without saying that running out of cocoa powder is not an option. I love how your energy balls are both very healthy (no sugar) AND very chocolate-y.
