Post-Run Breakfast

I’ve had this fruity, tofu breakfast idea in the back of my mind since my last trip to Rollin’ Oats where I bought the boat loads of frozen fruit they had on sale.

FoodFash Breakfast Pudding (2 servings)

1 – 12 ounce pack of silken tofu

1 cup frozen strawberries, partially thawed

1 cup frozen raspberries, partially thawed

2 tablespoons maple syrup

optional: 1/4 teaspoon salt

Pulverize all of the above ingredients in a blender and enjoy a 200 calorie, 8 grams of protein, 7 grams of fiber, smooth and fruity breakfast!

    I can’t decide whether that seems more like a mousse or a smoothie – either way it has the be a super-delicious high-protein post-run snack (geeze, ya think there are any hyphenated adjectives I missed?)

      Ohhh mousse is the word I was looking for! Def too thick to drink. Thanks!

    I once had to provide food for a band we flew in from Cali. One guy asked for tofu. The rest enjoyed Italian, TG. Anyway it was my 1st and last experience with tofu. I hated it. This looks really yummy, and if you describe it as mousse, maybe I should give it a second try huh?
