It’s been a pretty little while since I last slaved over a meal. Slave isn’t an accurate description. How about… It’s been a while since making a dinner with legitimate prep work, steps, cook time, and all those things that usually turn me off of a recipe stat.
Not only prep work, but steps that required actual wait time between the steps! I once again questioned my skimming skills – I clearly missed the word ‘wait’ a few times in this Veg Times recipe…
Luckily the smell of cinnamon and the new Arcade Fire album kept me entertained.
If I were to make this recipe again, it’s safe to say I’d skip each and every one of the eggplant shell prep steps. It was the primary time consumer of this recipe and I, embarrassingly but not regrettably, didn’t even taste a bite.
And whether or not I would make this recipe again? I’m undecided. The cinnamon, walnuts, and lemon juice were uniquely good. I left out the bread crumbs, so it was gluten-free. And although it did not hit THE spot, it did hit A spot: the healthy one, the one where you feel full but not overly stuffed, the one I think most meals should aim for.

I’m loving the additional photographs. People do love the eye candy and they break up the text. I vote YES! The new Arcade Fire is pretty money, eh?
