Pistachio Popsicle Round-Up

Last week, when I was browsing through friends’ blog posts, I came across Megan’s vegan banana split popsicle recipe which reminded me that I, too, have popsicle molds that have been collecting dust in the cabinet {for years}.  And though her recipe looks delish {chocolate and sprinkles!}, I couldn’t help but crave a pistachio pop.  So I searched the web high and low for further inspiration and these four recipes caught my attention.

Salty sweet, savory sweet – I’ll take it all.  I gravitate towards anything that cuts out the sickeningly sweet.

Honeydew is… not my favorite.  It’s the last to go {if it goes} in my fruit bowl.  That being said, I do appreciate the light and refreshing nature of honeydew flavor.  So the idea of honeydew in a pop, mixed with some cream, and paired with a nut really lured me in.

I read sour cream and had to click.  This tart and densely creamy pop has got to be worth a try.

And lastly, the ice lolly.  I adore rose-flavored desserts and I can’t see how pistachio and rose couldn’t be a winning combination.

I plan on creating a hybrid of these pistachio pop recipes this weekend to celebrate the first weekly weather forecast this season without a rain cloud.  Stay sunny for us, Austin!
