Lunch: Mushroom Couscous with Asparagus

Networking Happy Hour with Laura!

Lots of snacks I couldn’t eat.

I distracted myself with a cocktail.

Dinner (spoiled by crackers and strawberries): Greenwise Wheatberry Salad

Dessert: Black Licorice

Ordinarily, I steer clear of weeknight shmoozing events because my awkwardness in unpredictable.  Sometimes I’m chatty, sometimes I’m not, sometimes I tangent in directions one should never go.  Like I said, unpredictable.

But I hadn’t seen Laura in quite some time, so when she invited me to the May Celebrate Tampa Bay event, I was willing to challenge the awkward.  Thank goodness for a stiff dirty martini and the one degree of separation between strangers that’s bound to happen in small town Tampa!

Breakfast: Key Lime Soy Yogurt, Ground Flax & Blackberries

Lunch: Spinach, Refried Bean & Nacho “Cheese” on Brown Rice Tortillas

Snackage: Homemade Coconut Oil Chocolate

Dinner Part I: Tofu Croutons

Dinner Part II: Mango, Mini (locally grown) Cukes, Pita & Homemade Hummus

I didn’t realize how many newly discovered favorite things I consumed today until uploading pictures, but here goes, starting with breakfast…

I thought the only place I could find Key Lime WholeSoy Yogurt was LA, but I found it at Rollin’ Oats over the weekend – total score!

I happened to read a Hungry Hungry Hippie post discussing Vegan Gourmet Nacho “Cheese” and was drawn to the familiar packaging at Whole Foods last night.  I agree with the not great appearance and pretty good flavor, but I disagree on the meltability.  Mine melted.  She sliced, I finely shredded, that could be the difference.  Either way, I love her blog and you should check it out!

TOFU CROUTONS!!!  I modified the tofu crouton recipe from the Rollin’ Oats website for the lush dinner salad I planned on making tonight.  But there was a big oops, a big one.  They were so stinking good I ate all the croutons, so an entire package of tofu, before the lettuce even made it out of the fridge.  See?  Oops!  I’ll post the modified crouton recipe tomorrow.

And then I scrambled together a few random snacks because, let’s face it, a block o’ tofu is not an acceptable dinner.  The locally grown, mini cucumbers were even tastier than I had anticipated.  I assumed correct that they’d be firm and lack seeds, but they had a slight sweetness to them that caught me by surprise.

What a day!

Becoming A Freezer, In Pictures

Breakfast: Oatmeal with Almond Milk, Raspberries & Maple Syrup

Lunch: Leftover Portobello Chili (from the freezer!)

Snackage: Greenwise Olives (all of them)

Dinner: Spicy Kale and Ponzu Marinated Tofu (pressed)

Dessert: Protein Pudding

About a month ago I made Portobello Chili and ate it until I had chili seeping out of my eye holes.  Not really, but I felt as though that was on the verge of happening.  So I stuck a few chili filled mason jars in the freezer and called it a day.

Although I often wish I was a “freezer”, I’m not.  But I can tell you a few reasons why today’s freezer story was a success.

– It was chili, and chili always tastes better the next day (or month)

– I froze individual portions which prevented me from having to heat up a huge amount of frozen food only to stick some back in the freezer

– I used mason jars to store the chili so it was easy to remove the lid and stick the frozen chili straight into the microwave (mason jars, btw, are a super cheap and all around better alternative to tupperware)

For reasons unknown, having a successful freezer story makes me feel accomplished and so I’ve made a mental note to freeze more often.

Oh!  And keep an eye out for a protein pudding FoodFash Mash!

Snack: Leftover Rasa Lila Pretzels

Pre-Yoga Dinner: Ginger Cabbage and Ramen

Post-Yoga Dinner: Soho Sushi Miso Soup & Ginger Salad

I was peer pressured into exercise tonight.  Chrissie and Meghann wanted to check out the 7PM Prana Flow class at Yogani and I couldn’t say no.  I’m glad I went, but man was it tough!  Graceful, I am not.
