Cucumber Gin Cocktail

I made an accidental cocktail discovery last weekend.  Just as I was about to become annoyed with how much juice was going to waste when I was grating cucumbers for tzatziki, I spotted a bottle of gin out of the corner of my eye.  And the wheels started turning.

Cucumber juice was the missing piece to the puzzle of cocktail ingredients I already had on hand: gin, lemon juice, sugar, water.  I put these pieces together like a baker, using tablespoons instead of ounces. And with all my might {I don’t know how bartenders do it}, shook my cocktail shaker as hard as I could. Just enough cucumber flavor, a tad of tart, and a hint of sweetness, the result was an extra refreshing, Sunday Funday cocktail.

More Green Juice

Dr Oz Juice

This “juice” was the second recipe I made from the Dr. Oz weekeend cleanse.  The first was breakfast quinoa.  Annnnd the third was supposed to be the soup, but all 20-ish dollars of ingredients are sitting sort of rotten in my fridge right now.  I’d say oops, but I’m not too bothered by it.  I’ve decided to say “yes” to the invites I’d ordinarily turn down to work on a post and not let the pressure of creating new content get the best of me.

So here it is, a pressure-less post about some juice.  Someone else’s juice in a pretty cup with an umbrella straw.  Drinking this juice almost felt like vacation.  Rather a healthy, little, non-alcoholic stay-cation (the kind where you stay in, avoid emails, and get all of your laundry taken care of).  I doubled the pineapple to reaffirm the stay-cation-ness.

I drank half of the juice right away and put the remaining half in the fridge to bring with me to work.  I’m usually pretty grossed out by day old smoothie, but I think the straining away of the elements allowed this juice to keep.  It kept so well that I’m thinking of experimenting with creating bulk quantities of juice and keeping some in the fridge for early in the week and freezing the remaining juice for later in the week.

Any recommendations for freezing homemade juice?

Chop Chop

You know how most of the time you finish eating a salad, not because you’re full, but because you’re over it?  Then two hours later when you’re prematurely starving again, you’re like “man I wish I would have finished that salad”?  Number one reason why salad choppers are magical.  They allow you to turn a boat load of greens into a normal sized portion that’s super filling and far from boring.

They also allow for a perfectly even distribution of ingredients and dressing.  A Type A personality’s salad dream!

I’ll be making a lot of chopped concoctions over the next few weeks, so I hope you’re as eager about de-fluffing for summer as I am.

A FoodFash Chop

Handful of greens (I used baby romaine)

2.5 ounces of solid white albacore tuna in water

1/2 avocado, roughly chopped

1/2 green apple, roughly chopped

1/3 cucumber, roughly chopped

1 tablespoon Vegenaise

1 tablespoon white balsamic vinegar

Chop, chop, chop and enjoy!
