Get This Chocolate Out Of My House, In Pictures

Breakfast:  Sliver of Yesterday’s Chocolate Tart (that I may or may not have dreamt about last night) and…

An Apple (to justify eating chocolate tart for breakfast)

Lunch: Chopped Spinach, Green Pepper, Red Onion and “Feta” Salad

More Lunch: Amy’s Vegetable Barley Soup

Dinner:  Yellow Miso Quinoa with Wilted Spinach and More “Feta”

Not pictured?  A bowl of peas with a dab of yellow miso that I ate about an hour before fitting in a little cardio.  Why peas?  Because also not pictured are the additional slivers of chocolate tart that I helped myself to after each meal and I felt the need to balance the abundance of sweet with a little green.

I sent my mom home with a  hearty portion of the remaining chocolate tart, but honestly…  The tart needs to go!  I can’t stop, won’t stop.

Breakfast: Van’s Gluten-Free Waffle Topped with a Fried Egg

Lunch: Amy’s Enchiladas

Pre-Dinner: Carob Covered Raisins

Dinner: Acorn Squash with Quinoa, Apricot & Sage Stuffing

I’ve been hooked on Amy’s Organic Meals for a solid three years.  They’re delish and, equally as important, they keep me full.  When I looked at my scrolling list of chores tonight, I strongly considered enchilada meal part two.  But with an acorn squash staring me in the face, begging to be stuffed, that idea quickly turned into an impossibility.
