Do you ever have one of those days that you feel like you squished multiple days into a single day?  And you look back on your very first thing you knocked off your list and it seems like ages ago?  Today was one of those days.  It started with waking up in Florida, returning a rental car, and heading to the airport and ended with cleaning out cabinets in Austin, a mini trip to Fresh Plus, a 4-mile Shoal Creek trek with Skylar, and a fancy little dinner.  The stuff that happened in between went something like work, work, work, wondering how I could be so homesick after 5 days at home, work.

When I was cleaning out the cabinets {homesick therapy}, I found a tube of polenta that served as inspiration for dinner.  And then the thought progression continued like so: burgers -> arugula & spinach -> mushrooms & onions.

Zucchini Burgers

I put my oven to work by simultaneously sautéing, grill-panning, and broiling. And when everything was cooked to perfection, I assembled the mini towers of goodness and served to Skylar and Max.

I liked changing up a plain old meat/veggie combo with the texture of polenta. And I totally dug the addition of greens and sautéed veggies, but a classic topping of lettuce, tomato, pickle, and onion would be equally as delicious.

Jalapeño Hand Pies

HEB Primo Picks

When the November HEB Primo Picks box arrived, I was hoping it would include ingredients that I could use for holiday baking.  New-to-me, non-pumpkin ingredients that would serve as holiday recipe inspiration.

Jarred Jalapenos

I was tempted to use the jarred HEB jalapeños to make jalapeño poppers, but instead, challenged myself to be a tad more creative.  And as I was prepping my gramma’s pie dough for Thanksgiving pies, the idea of jalapeño hand pies came about.

Jalapeno Hand Pies

Spicy jalapeños, flavorful pepper jack cheese, smooth cream cheese, and classic cumin filled these pastries.  Jalapeño hand pies were extra popular among the gents at the holiday party I attended over the weekend.

I also prepared a baked brie using the Central Market Cranberry and Orange Chutney that was included in the Primo Picks box that I will post the recipe for tomorrow.

Spaghetti Squash & Turkey Meatballs

Spaghetti Squash with Turkey Meatballs

The past month has been filled with a ton of change/excitement/nerves/ emotion. And since it’s a very well known fact that any of these heightened things can be calmed by carbs, I’ve had a constant craving for gnocchi every minute I can recall for as long as I can recall minutes.  In a too-short span of time, I did the restaurant gnocchi thing, the pseudo-homemade gnocchi thing, the pizza thing, the pasta thing – I no-joke did every carby thing.  And now… my jeans are telling me to cool it.

Still craving comfort, I leaned on spaghetti squash and veggie-filled turkey meatballs.  I am, after all, about to take the biggest risk I’ve ever taken in all of my 30 great years.

Side note:  In the coming days, I will say goodbye to the only profession I’ve ever known (9 years!), Ariel will fly in from LA for Fun Fun Fun Fest, I will follow her back to LA for a week, and then… I will begin a new professional adventure.  More details to come!
