Chilaquiles With Sprouted Corn Tortillas

Gluten Free Chilaquiles

Although I rarely cook Mexican food, this chilaquiles recipe kind of set the stage for my cooking style. It was the first time I snuck shredded zucchini in a dish. And it was one of the first dishes that gave me the confidence to start playing around with modifications.

Sprouted Corn Tortillas

This time around, I modified by adding pulled chicken thigh meat and substituting regular corn tortillas with sprouted corn tortillas.  And let me just tell ya, this was the best chilaquiles yet!

Bison, Sausage & Quinoa Hash

Bison Quinoa with an Egg

If I’m not cooking, Snap Kitchen is my 100% go-to for quick, healthy eats.  I have regular favorites: salmon salad, turkey chili, veggie lasagna.  But the one I just can’t seem to get enough of these days is the bison quinoa.  Yep, bison!

Ground Bison & Sausage

After eating bison quinoa for lunches in a row, I thought “Hey! I can totally make this”.  After all, the ingredients are pretty visible and hashes are pretty flexible.

Ground Bison, Sausage & Quinoa Hash

I added some hot Italian sausage to get some extra grease to sauté the veggies in, but you could get by with using 1-1/2 lbs of ground bison in lieu of sausage.  And leftover hash is perfect reheated and topped with an over medium egg.

Gluten-Free Steak & Egg Quesadillas

Steak & Egg Quesadilla_

When Mission Foods asked if I’d like to test out their gluten-free tortillas and create a recipe, I was pumped.  I love quesadillas.  Prior to blogging and social media, when there was no proof of meals enjoyed, more of my dinners were bean and cheese quesadillas than not.  But as I got older, a combination of things happened {in addition to blogging} that changed how I ate.  One of the more recent things is the ongoing back and forth between specialists to determine whether or not I have an autoimmune condition and their conflicting opinions regarding the affects of gluten on those who are in the increasingly popular autoimmune club.  Without getting wayyy off track, I’ll leave it at.. I try to eat gluten-free as much as possible, but because I don’t have Celiac Disease, I’m not too hard on myself when life gets in the way.

Steak & Egg Quesadilla Ingredients

Moving on back to quesadillas, I couldn’t bring myself to write a post about my beloved bean and cheese combo.  And I tried mixing it up a little by adding shredded rotisserie chicken and some cumin and, although good, they just didn’t feel special enough to blog about.  Then I thought about reuben quesadillas! And my roommate and officemate both made a “sick!” face.  I’m still not convinced that a reuben quesadilla would be gross, but I decided it was best to move on {you should have seen their faces}.

Just as I was feeling completely out of ideas, I thought of steak and eggs with salsa verde and how I hadn’t seen that smushed between tortillas before – and that’s how this post was born.  And the addition of caramelized onions, avocado, and fresh cilantro packed this quesadilla with enough nutrients and complexity to make them a meal.

Jalapeño Hand Pies

HEB Primo Picks

When the November HEB Primo Picks box arrived, I was hoping it would include ingredients that I could use for holiday baking.  New-to-me, non-pumpkin ingredients that would serve as holiday recipe inspiration.

Jarred Jalapenos

I was tempted to use the jarred HEB jalapeños to make jalapeño poppers, but instead, challenged myself to be a tad more creative.  And as I was prepping my gramma’s pie dough for Thanksgiving pies, the idea of jalapeño hand pies came about.

Jalapeno Hand Pies

Spicy jalapeños, flavorful pepper jack cheese, smooth cream cheese, and classic cumin filled these pastries.  Jalapeño hand pies were extra popular among the gents at the holiday party I attended over the weekend.

I also prepared a baked brie using the Central Market Cranberry and Orange Chutney that was included in the Primo Picks box that I will post the recipe for tomorrow.
