I’ve been all about simple recipes this year. Simple chicken. Simple shrimp. Simple salmon. Why not post my favorite simple {and veggie-filled} pasta? Below is a recipe for spinach and pesto linguine that’s jam-packed with over 2 cups of spinach per serving.  Dig in!

I wish I could take complete credit for adding cucumbers to an ever so classic BLT. But I can’t. A few weeks back, I visited Zed’s in north Austin and couldn’t resist ordering this sandwich. And before I could even swallow my first bite, I knew that I’d forever be adding cukes to BLTs.

It made total sense.  Whenever cucumbers are an option when building a sandwich, they’re the first option I choose.  They have the incredible ability to lighten up anything with their cool, delicate flavor.  And I’m always down for the addition of something crisp.

Bite-sized banh mi might just be the most adorable food to ever come out of my kitchen. Inspired by an Asian-themed tea party,  these tasty, little sandwiches are filled with tender meat, crisp vegetables, and spicy mayo.

And other than the bit of muscle this recipe requires for chopping vegetables, it really only involves some slow cooker and assembly action. Banh mi are definitely not as intimidating as I imagined {which is usually the case}.

Any dish that provides an excuse to consume copious amounts of hot sauce is a dish worth repeating as often as.. I feel like hopping on the kitchen counter to fetch the crockpot that’s stored in the cabinet above the fridge.

I’ve been cooking variations of this crockpot buffalo chicken recipe for years, making minor tweaks each time. But the “buffalo chicken lettuce taco” version in this post is my favorite yet!
