Avocado Toast – #ForHereFromHere

June 26, 2016 by Kristin

Yellowbird Avocado Toast

Earlier this week, Ozarka Water sent over a box of local {to me} products and asked the question, “Why do you love where you live?“. The box alone {provided by a company that comes from three Texas springs} represented one of the top reasons I love Austin, TX – it’s chock-full of entrepreneurial spirit. Almost everyone you meet has a side project, runs a start-up business, or has established a local brand. I’m confident you could survive in this town solely by shopping local. And I just couldn’t be an ounce more happy to call Austin, TX my home.

Another reason I love Austin is that, not only are there so many wonderful grocery stores in a close proximity, but each of those stores makes an effort to support and highlight local products.  For example, the Yellowbird hot sauce that was included in the box.. I already had {and always have} in my fridge. And it’s not uncommon to see Yellowbird dominating the end cap at Whole Foods or Central Market – both born in Austin, as well.

Queso

One of my favorite activities this summer has been rooftop grilling get-togethers at my friend, Jackie’s, apartment. This has also been the perfect venue to share the products I’ve been sampling with my friends, like the Paqui’s tortilla chips and Cookwell & Co. queso {pictured above} and Jelly Queen’s steak seasoning {pictured below}. A common theme with local food companies is quality ingredients, so it made complete sense that the queso was made without cheez product, chips without GMOs, and spice mix with organic ingredients.

The un-pictured items that we incorporated into our rooftop gathering were Snow’s BBQ Sauce and Taste Elevated’s sweet and spicy mustard seeds.  All of the products mentioned above added a layer of fun and excitement to our evening!

And since moving to Austin in February of 2012 {4-1/2 years ago!}, home-cooked weekend breakfasts have become one of my most treasured times. I love waking up, moseying to the kitchen, whipping up something delicious, sitting down with a cup of coffee, and taking my time enjoying all I’ve prepared. Below are instructions on how to make one of my frequently made take-your-time breakfasts, avocado toast.

Disclosure: Although Ozarka Water kindly provided the products mentioned above, the opinions in this post are completely my own and based on my experience.

Hot Italian Sausage Meatballs

May 25, 2016 by Kristin

Italian Sausage Meatballs with Zoodles

I’m typically a turkey meatball {with a ton of added veggies} gal. But zucchini noodles topped with zucchini-filled meatballs seemed like, well, entirely too much zucchini. So that’s when I got to thinking..

Hot Italian Sausage Meatballs 3

Aren’t traditional meatballs made with ground pork? And aren’t I the hugest fan of hot Italian sausage? And that’s how these hot Italian sausage meatballs came to be.

These spicy and flavorful meatballs are filled with the good stuff like onions and fresh parsley. And with no gluten-ous fillers, they’re the perfect topper for a gluten-free zucchini noodle dinner.

Easy Baby Back Ribs

Pressure Cooker Baby Back Ribs

Homemade ribs are one of those dishes that seem out of reach for busy-bee, apartment-dwelling folks. Without a grill and a few hours to spare, impossible is the first word that comes to mind. But what if someone told you that super tender baby back ribs could be finished in just 35 minutes?

Ribs Pressure Cooker XL

You wouldn’t believe it, but you’d try it – right?

Pressure Cooker Baby Back Ribs 2

And then you’d fall even more in love with a pressure cooker, because..

Fall-off-the-bone ribs, 35 minutes, minimal mess.

Best Salads In Austin

February 28, 2016 by Kristin

CityGuide2016-612x300

As salads as meals become increasingly popular, the days of offering merely house or caesar are a thing of the past.  Below is a list of the most stand-out salads in Austin, a city where the food competition {even for salads} is fierce.  Have a suggestion?  Leave a comment and I’ll be sure to check it out!  Looking for other bests in this great city?  My fellow food bloggers have got ya covered here.

Cantine - Nizza Salad

Cantine “Nizza”

What it is: Oil-cured Spanish Tuna / Spinach / Green Beans / Potato / White Beans / Fried Capers / Soft-cooked Farm Egg

What I dig: A close friend of the salad niçoise, the nizza adds beans, potatoes, and fried capers to the mix.  This salad is vibrant, protein packed, and perfect for a weekend lunch.  Ask for a side of whipped feta – I promise you won’t regret it.

Cafe No Se Kale Salad

Café No Sé “Shredded Kale” Salad

What it is: Shredded Kale / Cauliflower / Crispy Rice / Currants / Dill / Cucumber / Optional: Egg

What I dig:  If a salad could be described as fun.. The tang of the dressing, subtle bursts of flavor from the currants and dill, and delicate crunch of the crispy rice, this salad is totally fun.

La Condesa Mixta con Pollo Rostizado

La Condesa “Mixa con Pollo Rostizado”

What it is: Roasted Chicken / Baby Arugula / Bibb Lettuce / Jícama / Radish / Grape Tomatoes / Avocado / Red Onion / Queso Fresco / Mustard Vinaigrette

What I dig:  So many crisp veggies! Jícama, radish and cucumbers add excellent crunch and texture.  And the roasted chicken is super tender and flavorful.

Josephine House Winter Slaw Salad

Josephine House “Winter Slaw Salad” with Seared Chicken Breast

What it is: Turnip / Beet / Swiss Chard / Brussels Sprouts / Shropshire Blue Cheese / Hazelnut Vinaigrette / Seared Chicken Breast

What I dig:  A unique combination of ingredients.  Although their menu is ever-changing, you can count on Josephine House for hearty salads with ingredients that will continue to surprise.

Blue Dahlia Mozzarella Salad

Blue Dahlia “Mozzarella Salad”

What it is: Fresh Mozzarella / Tomatoes / Basil Leaves / Basil Pesto / Mixed Greens

What I dig:  The generous serving of pesto and giant bed of greens.  A traditional Caprese salad, although delicious, always leaves me feeling like I ate a giant pile of cheese.  Having the ability to pair each bite with tomato, basil and a fork-full of greens makes for a more rounded meal.

Henri's Smoked Trout & Avocado Salad

Henri’s Smoked Trout & Avocado Salad

What it is: Smoked Trout / Avocado / Isreali Couscous / Pickled Shallot / Radish / Capers / Sherry Vinaigrette

What I dig:  Pickled shallots, a fish that isn’t salmon, and all the while, lightly dressed.

Elizabeth Street Bun

Elizabeth Street Cafe Grilled Gulf Shrimp Bún

What it is: Grilled Gulf Shrimp / Rice Vermicelli / Lettuces / Herbs / Cucumber / Carrot / Roasted Peanuts / Nuoc Cham

What I dig:  Okay, this isn’t really a salad.  But herbs!  I can’t help but add this dish when it is filled with fresh herbs and veggies and set on top of a pile of lettuce.  And the grilled shrimp of some of the most giant, best lookin’ in town, too.
