I typically don’t post recipes that include ingredients that have ingredients. But I’ve been busier than ever lately and things like marinara from scratch just aren’t in the cards. And since I figured you may be busy too, I decided to create a new section on the blog called Easy Meals, where I’ll archive nutritious meals that require minimal effort. Enjoy!
Spaghetti Squash With Grilled Chicken & Asparagus
One small spaghetti squash – Preheat oven to 400 degrees and line baking sheet with foil. Cut squash in half, scoop out seeds, place flesh side down on baking sheet, and bake for 45 minutes {or until flesh can easily be picked apart with fork}.
Two grilled chicken breasts – Recipe here, if needed. Cut into slices.
One cup marinara sauce – I used this organic tomato basil sauce.
One bunch grilled asparagus
Assemble: Use a fork to separate the spaghetti squash flesh from rind. Top each half with 1/2 cup marinara sauce and sliced chicken. Serve with a side of grilled asparagus.
