It’s no secret that I’m the hugest fan of any kind of protein salad, so when Ariel suggested we try her signature staple, I began chopping without hesitation.  And when she took her favorite ingredient out of the fridge, a mystery fruit, my level of recipe engagement spiked through the roof.

An Asian pear, mystery solved.  My first thoughts?  The flavor of a pear with the consistency and ripeness predictabilty of an apple, genius.

Side by side, we chopped and mixed.  And then it was time…  I added my two cents.  And once again, no hesitation, I knew my Greek yogurt substitution would be enthusiastically welcomed.

The Recipe

3 cans of solid white tuna

4 stalks of celery, chopped

1/2 red onion, chopped

1 Asian pear, chopped

enough Greek yogurt to moisten the salad

garlic powder, creole seasoning, and salt to taste

romaine lettuce leaves

jalsberg cheese

We piled Indian style around the coffee table, stuffed our lettuce boats, and enjoyed in true Indian style, Asian pear, Greek yogurt, multicultural fashion.
