Breakfast: Sprouted Wheat English Muffins with Fried Eggs (and messy yolk)
Lunch: Leftover Black & Bleu Salad
Dinner: Leftover Black Bean Salad (sans cheese & avocado)
Dessert: Leftover Birthday Cake
Holy leftovers! As the move date gets closer and more boxes get packed, leftovers and simple meals will be as sure as the sun in this kitchen. Luckily, I am obsessed with salads these days, which will prevent my pantry from being stocked with ingredients that will eventually need to be packed.

Ugh, all of those pictures look unbearably fresh and delicious. I’m really looking forward to my favorite salad combo @ eden fresh for lunch today – hearts of palm, feta, broccoli, carrots and chickpeas.

Ohhh solid combo, I’ll keep that one in mind during this salad kick!

Those fried eggs look amazing! Lately, I have been loving a bleu cheese and blueberry dressing topping on my salad – totally weird but it works for me 🙂

I don’t think that’s weird at all! I would have never thought of it on my own, so I’m happy to add that to my list of salad musts!

Hi Kristin, Been MIA for a month now. Dad’s been in the hospital, broken ribs. I see you’re enjoying Texas. That salad looks amazing! Black beans are a favorite.
Best of luck in your new home 🙂
