For weeks, department stores have been overly stocked with boots and sweaters and cross-country friends have been discussing chilled air and changing leaves. More recently, autumnal colored foods have been dominating the flood blogging scene. I’m a Floridian. I feel left out.
My first bout of this feeling occurred when I stumbled upon a recipe for Sage Butternut and Apple Soup on Seriously Soupy. I couldn’t wait to try it, I made a grocery list, I stepped outside, I changed my mind. How quickly ninety degree weather in October can alter your plans…
Luckily, Florida falls are weird. Ninety degrees today, seventy degrees tomorrow, and a randomly placed fifty degree night here and there.
It just so happens that one night in the fifties, just one night, is all it takes for this Florida girl to get into the fall spirit. Boots and soup, here I come!
I forgot how the slightest bit of cinnamon and nutmeg can make it feel like Christmas. I resisted the urge to crank down the air and pretend I was… anywhere colder than here.
I chopped and boiled and stirred. I followed the instructions almost to a tee. I let the soup cool. And then… I blended the heck out of it.
If it were possible to put autumn in a bowl, this recipe would get you there. This soup is the perfect combination of color, warmth, and spice. And since it’s difficult to halve a recipe that has a main ingredient the size of a small child, I will be colored, warmed, and spiced through mid-November!
