After last night’s fiasco, I started to question my cooking sans recipe abilities.  Like, really question.  So I called my mom, put her on speaker, and decided to multi-task.  I’m certain our conversation was not as entertaining for her as it was helpful to me, but the distraction allowed me to mindlessly make my meal.

I heated up a teaspoon of olive oil and started to brown a half of an onion and two cloves of garlic.  Mindless, classic, and all the while…  Safe.  I sprinkled with salt and pepper and added a half can of vegetable broth.

“Are you sure you can talk?”  “Yeah, mom, I’m good.”  I wasn’t good.  The convo was filled with unnecessary ums and okays, but my meal was looking fantastic so I kept on.  When the onions were close to transparent, I threw in one sliced zucchini and a few (seven) shrimp.

Score!  Things were smelling good and looking up.  Recipe-less cooking confidence was on its way back.

I flipped the pinkened shrimp and toasted a couple Chung’s spring rolls to satisfy the Asian craving that last night’s dinner left behind.  So. Good.
