Sharing a kitchen staple I love so much with a FoodFash fan totally makes my week! But first, I’m going to share how easy it is to sear a pork tenderloin when you’re using the correct equipage.

Ingredients
- 12 ounces pork tenderloin trimmed of fat
- 4 tablespoons vegetable oil
- salt & freshly cracked black pepper to taste
Instructions
- Preheat oven to 400 degrees.
- Heat oil in enameled cast iron pan over high heat.
- To test if the oil is hot enough to sear, gently set a piece of pork fat in the pan and, if it sizzles, it's ready.
- Gently set pork in hot oil and sear, uninterrupted, for 4 minutes on each side.
- Place entire pan in pre-heated oven and cook until internal temperature is 150 degrees, about 15 minutes.
- Remove pork from pan and let rest for 5 minutes before serving.
