I’ve Missed You

Due to my recent obsession with cooking all things seafood, my kitchen and I have completely neglected tofu.  Who would have ever though fish would trump veg in the convenience department?  But even though that’s totally the case, I’ve been missing that little, white block of curd.

I forgot to press the tofu the night before, but pressing for an hour proved to be enough time.  I sliced the block in half and then made larger chunks than usual in an honest attempt to recreate yet another Whole Foods salad bar favorite.

Parchment paper.  Olive oil spray.  400 degree oven for 25 minutes on each side.  Perfection.

Soak up any excess grease with a paper towel, coat with some sawce, and put it in the fridge for tomorrow’s lunch.  I topped leftover garlicky kale with this tahini and white balsamic covered tofu and let me just tell ya, it was like going to the Whole Foods salad bar minus the gynorm line or expense.

Oh Kale Yeah!

As wonderful as the Austin Whole Foods salad bar is, I have yet to see my favorite garlicky kale in the line-up.  Thankfully, I love Brittany @ Eating Bird Food’s recipe sooooo much that the lacking salad bar is just a blip on my frustration radar.

I substituted liquid aminos for ponzu sauce only because I’m fresh out.  You couldn’t tell much of a difference, but I would venture to say that I prefer the use of liquid aminos simply because it’s better for you.

I also doubled the amount of sauce because it’s that good.

Allergy Kid

I’m going on four weeks of total body freak out.  I can’t kick this “cold”.  And minus the occasional weekend wildness, I run a pretty tight health ship.  Always lots of whole foods, lately lots of gym time, and very rarely a weekday cocktail.  So why, oh why, am I still so sniffly??  Stinking.  Allergies.

So in addition to the daily allergy meds I’ve refused to take until my recent state of desperation, I’ll also be adding a tablespoon of local honey to my plain Greek yogurt breakfast.

And even though many are skeptical that local honey can build immunity to local allergens, I can’t help but give it a whirl.
