Lunch: This Salad (minus the Sunshine Burger I forgot at home)
Dinner: Sunshine Burger with Havarti Dill & Avocado
It was a busy Fat Tuesday! I ate breakfast and lunch at my new desk, rushed home to scrounge up some dinner, and then headed out to celebrate at Lucy’s Retired Surfer Bar. Hope you all had a lovely Fat Tuesday!

How do you make overnight Irish oats?

You just use Irish oatmeal instead of regular oatmeal. It has a lot more texture/bite to it. I use McCann’s quick cooking oats.

I just made irish oats last night….no joke! Naturally, I left for the office and forgot to get them out of the fridge. Miss you!

I hate when that happens! I brought oats with me this morning and when I got to work they had breakfast tacos. Breakfast tacos won…
