Pancake Post Apologies

I know what you’re thinking.  “FoodFash has turned into Kristin’s Pancake Blog”.  But I just can’t help myself.  Over the past few weekends, I’ve been inspired by a new fruit.  And by inspired I mean I wanted to shred X fruit to pieces and plop said shreds into pancake batter.

FoodFash Apple Cinnamon Chia Buckwheat Pancakes (yields 8 pancakes)

3/4 cup of buckwheat pancake mix

1/2 cup of almond milk

1 egg

1 gala apple, shredded

3 tablespoons of chia seeds

3 tablespoons of maple syrup

3/4 teaspoons of cinnamon

 I woke up so stoked for Week 2, Day 1!

I hopped out of bed, put on my running gear, and headed to Ybor City.  This was my first time running through Ybor and I really enjoyed it for a morning run.  The streets were super empty and I was shaded by pretty brick buildings.

With that said, I really struggled this morning.  I love, love, love getting a workout out of the way first thing, but I don’t have near as much energy as I do around the 5 o’clock zone.

Do you prefer morning or evening exercise?  Does one tend to be easier for you than the other?

    I love the pancakes. Chia seeds sounds like an interesting addition. Seen them, and grew a chai pet once. A funny Christmas gift from the hubby lol but never ate them.
    Oh my gosh Ybor?? I heard lots of nighttime stories, rough. You best be careful some of those crazies aren’t sleeping in the park!

    BTW – my son lives in Tampa too.

      I love Ybor! It was a “scary” place a little while back, but it’s pretty safe during the day and at night on the main streets. Do you visit your son here often?

        Oh my gosh I wish. Can you believe things are so bad I can’t afford the gas to drive to Tampa??? Ugghh something has got to give soon!

    Did you eat a tiny bit before you ran? We did this whole “energy” workshop here at work, and they suggested eating before you worked out… even just like 5 almonds. It tells your body ‘you’re not going to starve,’ and kicks off your energy for the day by leveling your blood sugar. I was skeptical, but it really works!!

      Yup! I had a boiled egg before this Saturday’s workout and peanut butter and bee pollen before last Saturday’s workout. I don’t know what the deal is!
