I had a decent amount of extra shredded “cheese” and zucchini from the fillo cups I made the other night and thought making some mac would be a functional use of said leftovers.
FoodFash Mac
(1 serving)
1/2 cup brown rice pasta
1 teaspoon Earth Balance
1 teaspoon crushed garlic
1/3 cup non-dairy cheese
1/4 to 1/2 zucchini, shredded
1/2 to 1 tablespoon nutritional yeast
Prepare brown rice pasta per the package instructions, drain, and put back in the pot. Add all of the ingredients except for the yeast and stir until the non-dairy cheese is mostly melted. Add the nutritional yeast and stir until evenly distributed. Then, serve yo mac!
Zucchini is my all time favorite sneaky veggie because, when shredded, you can barely tell it’s there. Zucchini also has high quantities of fiber, vitamin A and vitamin C, making it a supremely kind form of trickery.
What’s your favorite sneaky veggie?
Faith @ For the Health of It says
My favorite sneaky veggie is spinach – it can get blended into almost anything, and except for the green tint it gives, you’d never know it was there!

I love “sneaking” spinach too! You’re right about the green tint, it’s tough to convince someone there’s nothing sneaky about a smoothie when it looks like a Nickelodeon concoction!

Another recipe that I need to try! What is your favorite brand of non-dairy cheese? I haven’t found one yet that I like. I love sneaking spinach into smoothies. If it wasn’t for the green color, you wouldn’t even know they were in there!

You’ll have to let me know how you like it! I switch between Daiya and Vegan Gourmet. I used Vegan Gourmet for this recipe.

I’m a sneaky spinach person too! Smoothies, stir fry, pasta dishes. I’ve found some decent ways to “hide” carrots too.
foodfash says
I was just thinking of hiding carrots today. What do you think about carrot cookies??
Krista @ Can't Survive on Yarn Alone says
If you could get them almost like a carrot cake cookie i think it would.

I love the title – BIG GRIN – Reminds of my veggie hating niece! what she didn’t actually helped her! Great idea for zucchini.
Oh BTW the new blog photo is awesome!
