I can always trust my good pal CookingLight.com when I’m feeling a little uninspired in the meal department.   And I was once again proven right as the headline “5 Ingredient Vegetarian Dinners” popped up when I began my search.  Oh how I like being right :).

And!  I started a new thing last week: Monday lunch break grocery shopping.  It feels a bit like supermarket sweep, but I’m hoping it’ll free up time for a Monday afternoon workout.  The sweep was also the cause of another ‘recipe skimming’ instance.  I failed to read that the Refried Bean Poblano recipe would need to be prepared in the microwave.  Microwave?

The microwave in my kitchen is, for the most part, a decorative prop.  And since it’s pretty and rarely attended to, I figured it deserved its 15 minutes.  Smile!

I managed to fit that Monday afternoon workout in and all I really wanted for dinner was an easy bowl of Kashi and almond milk.  Really.  I was craving it.  But I also had two beautiful peppers in the fridge and busy week ahead, so poblano dinner it was!

The recipe cruised right along and the microwave skepticism gracefully turned into something more along the lines of a blessing.

Ohhh and then I licked some of the beans from my fingers.  BURN!!!!  My mouth was on fire well after I finished eating.  At least I didn’t rub my eyes?

Refried Bean Poblanos were so yum – like I said, Cooking Light doesn’t disappoint.  The poblano peppers were a perfect tortilla substitute.  The heat?  Well, the heat was toned down a TON by the remaining microwave rounds.  I scarfed my portion, put the leftovers in the freezer, and hope to report that they keep nicely!

    I love it when recipes only have a few ingredients because when I look at one that has 10+ it’s very intimidating! I also need a subscription to that magazine!

    Yum. I really think poblanos may be my favorite food. It’s weird because sometimes poblanos (actually, usually) have no heat at all. More like a bell pepper. Then you get a batch that just blow you away.

      I know! I’ve cooked with them before and never had and issue and this time… Well, let’s just say my thumb (weird, I know) is STILL burning!
