I know it’s due time to make something again when I find myself mentioning said something at inopportune times.  The ability to work ‘egg white oatmeal’ into a conversation while your favorite band is playing?  Too weird for words…

So egg white oatmeal for breakfast it is.  I veered from my usual recipe by using coconut milk and blackberry preserves rather than water and butter.  Not only does the coconut milk vegan-ize this morning favorite, but it is made up of short and medium-chain fatty acids that turn quickly into energy rather than storing as fat.  More energy in the morning?  Umm, yes!

And as I’m fighting off a not yet nasty cold, I was pleased to find out that this addition to my breakfast was a smarter move than I initially thought.  Coconuts are well known for their antiviral properties and could very well be the perfect partner in this below-the-weather battle.
